Disebut sate Banjar, karena sate ini berasal dari Banjarmasin (Kalimantan) dgn kekhasan bumbunya. This satay originated from Banjarmasin (Kalimantan/Borneo) with auntentic spices.

SATE BANJAR – BANJAR’S SATAY

Bahan/ingtedients:
1000 gr daging ayam tanpa tulang atau babi, potong kotak. 1000 gr boneless chicken or pork, chunk

Bumbu/seasoning:
3 sdm kecap manis. 3 tbsp dark sweet soy sauce.
1 sdt lada bubuk. 1 tsp pepper powder.
½ sdm ketumbar bubuk ½ tbsp coriander powder.
100 gr cabe merah halus. 100 gr ground red chili.
10 sdm saus tomat. 10 tbsp tomato sauce.
6 siung bwng putih, haluskan. 6 cloves garlic ground.
1 sdm petis udang. 1 tbsp black shrimp paste.
2 sdm gula merah. 2 tbsp brown sugar.
1 sdt garam. 1 tsp salt.
1 sdm minyak sayur + ½ sdm mentega tawar utk menumis. 1 tbsp veggie oil + ½ tbsp unsalted butter for stir fry.

Cara/method:
1. Campur bumbu dan daging ayam/babi. Marinate chicken/pork.
2. Tusuk dgn tusuk sate dan simpan dlm lemari es selama minimal 4 jam sblm di panggang. Skewer chicken and refrigerate at least 4 hours before grill.
3. Panaskan minyak dan mentega masukkan sisa bumbu dan masak hingga matang. Heat oil and butter, add remaining seasoning and cook well.
4. Panggang sate hingga matang. Sajikan dgn lontong atau nasi dan siram dgn saus diatas sate. Grill well the satay. Serve with rice cake or rice and pour sauce on satay.
