Nasi Goreng Rawon – Rawon Fried Rice

NASI GORENG RAWON – RAWON FRIED RICE

Bahan/ingredients:
2 porsi nasi. 2 portion rice.
100 gr ayam asap, potong dadu. 100 gr smoke chicken, cut on dice.
50 gr toge. 50 gr bean sprout.
3 buah cabe rawit organic, iris. 3 pcs organic chilipadi, slice.
2 sdm bumbu rawon. 2 tbsp rawon spices
Garam secukupnya. Some salt.
2 sdm minyak sayur. 2 tbsp veggie oil.

Pelengkap/complimentary:
Krupuk udang. Prawn crackers
Bwng merah goreng. Fried Shallot
2 btr telur asin. 2 pcs salty egg.

Bumbu Rawon/Rawon spices:
10 buah kluwek. 10 pcs Kluwek
2 btg sereh keprak. 2 stalks lemongrass, crust.
6 daun jeruk. 6 lime leaves
2 cm lengkuas. 2 cm galangal
3 cm jahe. 3 cm ginger
10 btr bwg merah. 10 pcs shallot
5 siung bwg putih. 5 cloves garlic
1 cabe merah besar buang biji. 1 pcs red bell pepper, seedless.2 sdt ketumbar bubuk. 2 tsp coriander powder.
¼ sdt merica halus. ¼ tsp ground pepper
¼ sdt jinten bubuk. ¼ sdt caraway powder
Garam secukupnya. Some salt to taste
1 sdm air asam jawa (asam jawa rendam air panas, saring dan ambil airnya saja). 1 tbs tamarin juice (soak java tamarin with hot water, strain and just take the juice)

Cara/method:
1. Haluskan dan tumis bumbu hingga harum. Lalu ambil 3 sdm utk membuat nasi goreng. Sisa bumbu dapat disimpan. Ground and stir fry the spices until fragrant, take just 2 tbsp for fried rice. Keep remaining spices.
2. Tumis bumbu rawon dgn daging ayam hingga daging berubah hitam, masukkan nasi aduk rata, tambahkan garam utk koreksi rasa. Stir fry rawon spices with smoke chicken until the chicken changing color to black, add rice, stir well, add some salt to taste.
3. Masukkan toge dan cabe rawit, aduk rata. Add bean sprout and chilipadi, stir well.
4. Sajikan panas bersama pelengkap. Serve hot with complimentary.

Note:
Bila ada sisa daging rawon bisa disimpan utk nasi goreng rawon. If you have beef Rawon, keep it for Rawon Fried Rice
