RICA CUMI HITAM – RICA BLACK SQUID

Bahan/ingredients:
10 ekor cumi sero besar, 10 pcs sero squid big size.
3 btg sere. 3 stalks lemon grass.
6 lbr daun jeruk. 6 pcs lime leaves.
2 sdm minyak sayur. 2 tbsp veggie oil.
2 gengam penuh kemangi. 2 hands full thai basil.

Bumbu perendam/marinate:
2 sdm kecap asin. 2 tbsp soy sauce.
1 sdm kecap raja rasa. 1 tbsp raja rasa soy sauce.
½ sdt lada bubuk. ½ tsp pepper powder.

Bumbu tumbuk/Roughly mashed seasoning:
8 buah bawang merah. 8 pcs shallot.
4 siung bwg putih. 4 cloves garlic.
10 buah cabe rawit (sesuaikan) 10 pcs chili padi (optional)
4 buah cabe merah. 4 pcs red bigg chili.
1 buah tomat. 1 pcs tomato.
¼ sdt gula. ¼ tsp sugar.
Garam secukupnya. Some salt.

Cara/method:
1. Cuci cumi, masukkan kepala kedlm perut cumi dan semat dgn tusuk gigi. Wash squid, put the head of squid into stomach squid, and embed with a toothpick.
2. Campur cumi dengan bumbu perendam dan biarkan selama 1 jam. Marinate squid for 1 hour.

3. Tumbuk kasar bumbu, dan tumis hingga harum bersama sere dan daun jeruk. Roughly mashed seasoning and saute until fragrant with lemon grass and lime leaves.

4. Masukkan cumi dan masak hingga cumi kaku. Add squid and cook until squid stiff.
5. Masukkan air dan kemangi, masak hingga air menyusut. Add water and thai basil cook until reduce the water.
6. Angkat cumi dan siap disajikan dgn nasi hangat. Lift up the squid and ready to serve in hot.
