BISTIK AYAM – CHICKEN STEAK

Bahan/ingredients:
4 buah paha ayam/dada. 4 pcs chicken thighs/chicken breast.
2 buah kentang, iris tipis. 2 pcs potato, finely slice.
1 buah wortel, potong. 1 pcs carrot, cut.
1 buah brokoli, potong. 1 pcs broccoli, cut.
2 buah telur rebus, belah 2. 2 pcs boiled egg, cut on 2.
4 buah tomat segar. 4 pcs fresh tomatoes
¼ buah bwg bombay, cincang halus. ¼ pcs onion finely slice.
1 sdm bwg merah goreng. 1 tbsp fried shallot.
1 sdm bwg putih goreng. 1 tbsp fried garlic.
½ sdm kecap manis. ½ tbsp dark sweet soy sauce.
½ sdm gula merah. ½ tbsp brown sugar.
½ sdm sauce inggris. ½ tbsp worchester sauce.
½ buah pala. ½ tbsp nutmeg.
Garam, lada dan bwg putih bubuk secukupnya. Some salt pepper and garlic powder.
200 ml kaldu ayam. 200 ml chicken stock.
1 butir telur, kocok. 1 pcs egg, beaten
3 sdm terigu terigu. 3 tbsp cake flour.
2 sdm tepung beras. 2 tbsp rice flour.
1 sdm tepung maizena. 1 tbsp cornstarch.
2 sdm mentega tawar. 2 tbsp unsalted butter. (Anchor)

Cara/methods:
1. Keringkan daging ayam dgn tisu dan lumuri dgn garam, lada dan bwg putih bubuk, simpan di lemari es 2 jam. Dry out chicken with tissue and marinate with salt, pepper and garlic powder, refrigerate for 2 hours.
2. Campur tepung terigu, tepung beras, tepung maizena dan campur garam, lada dan bwg putih bubuk secukupnya, sisihkan. Mix cake flour, rice flour, cornstarch and mix with some salt, pepper and garlic powder, set aside.
3. Rebus brokoli dan wortel dgn air garam, tiris dan sisihkan. Boiling broccoli and carrot with salted water, strain and set aside.
4. Goreng kentang. Frying potato.
5. Proses tomat dgn slow juicer dan sisihkan. Process tomatoes using slow juicer and set a side.
6. Celup ayam pada telur, lumuri campuran tepung dan goreng hingga kuning keemasan. Dipping chicken on egg, cover with mixed flour and frying until golden
7. Membuat saus/how to make sauce:
** Haluskan pala, gula merah, bwg putih dan bwg merah goreng. Ground nutmeg, brown sugar, fried garlic and shallot
** Panaskan mentega, masukkan bwg bombay, tumis hingga harum dan masukkan bumbu halus, tumis hingga harum. Heat butter, add onion, stir until fragrant and add ground spices, stir until fragrant.
** Masukkan juice tomat dan kaldu ayam, aduk rata, tambahkan garam dan lada secukupnya, kecap manis dan sauce inggris. Add tomato juice and chicken stock, stir, add some salt and pepper, dark sweet soy sauce and worchester sauce.
** Didihkan dan kentalkan dgn larutan maizena, sisihkan. Boiling and thicken with cornstrach batter, set aside.
8. Cara menyajikan/how to serve:
Potong ayam goreng dan letakkan diatas piring saji bersama sayur rebus, telur rebus, kentang goreng dan sajikan bersama saus bistik terpisah atau siramkan diatas ayam goreng. Cut fried chicken and put on dish with boiled veggi, boiled egg, fried potato and serve with separate steak saus or pour steak sauce on fried chicken.
