MIE KWANGTUNG – KWANGTUNG NOODLE

Utk 4 porsi. For 4 portion

Bahan/ingredients:
2 buah lapjiong, iris tipis serong. 2 pcs pork sausage, gently oblique.
1 ikat besar sawi, potong dan tiriskan. A big bundle of green mustard, cut and wash.
1 buah baso ikan kotak, iris, 1 pcs fish cake, slice.
6 buah baso sapi, belah 2. 6 pcs beef meatball cut on 2.
16 ekor udang tanpa kulit, rebus sebentar. 16 pcs shrimp skinless, boiling awhile.
1 buah wortel, iris serong. 1 pcs carrot, oblique.
16 potong usus babi rebus. 16 pcs boiled pig intestines.
4 siung bwg putih cincang. 4 cloves garlic, chop.
2 sdm minyak sayur. 2 tbsp veggie oil.
600 ml kaldu ayam panas. 600 ml hot chicken stock.
1 pak mie goreng kering. 1 pack crispy fried noodle. (Kim Hwa)

Bumbu/seasoning:
2 sdm kecap asin. 2 tbsp soy sauce. (Burung Hong)
1 sdm kecap raja rasa. 1 tbsp raja rasa soy sauce.
1 sdm kecap asin. 1 tbsp soy sauce. (Great River)
1 sdm kecap ikan. 1 tbsp fish sauce.
2 sdt minyak wijen. 2 tsp sesame oil.
1 sdm arak Shaoxing. 1 tbsp Shaoxing wine.
1 sdm saus tiram. 1 tbsp oyster sauce.
Larutan maizena utk pengental. Cornstarch batter for thickener.

Cara/method:
1. Panaskan minyak, masukkan bwg putih, tumis hingga harum. Heat oil, add garlic, sauté until fragrant.
2. Masukkan usus babi, baso ikan, baso sapi, udang rebus, aduk, masukkan arak shaoxing, aduk rata, masukkan bumbu lainnya. Add pig intestines, fish cake, beef meatball, boiled shrimp, stir well, add wine shaoxing, stir well, add other seasoning.
3. Masukkan kaldu ayam, didihkan. masukkan wortel, batang sawi, biarkan 5 menit, masukkan daun sawi, aduk rata, dan kentalkan dgn larutan maizena. Add chicken stock, boiling, add carrot, mustard green stem, lets boiling for 5 minutes, add mustard green leaves, stir well and thickened with cornstarch batter.
4. Proses Lapjiong dgn airfryer dgn suhu 100C, selama 15 menit. Process pork sausage with airfryer with 100C for 15 minutes.
5. Cara saji/how to serve:
Letakkan mie goreng kering diatas piring lalu siram dgn kuah, taburi lapjiong. Place crispy fried noodle on dish and pour with soup, put pork sausage/lapjiong on top.

Note:
-Utk topping silahkan sesuaikan dgn selera. Topping as desire.
-Bisa disajikan dgn acar timun dan cabe. Can be serve with fermented cucumber and chili padi
