Tumis Cumi & Terong – Sauted Squid & Eggplant

TUMIS CUMI & TERONG – SAUTED SQUID & EGGPLAN

Bahan/ingredients:
100 gr cumi asin, cuci, rendam dan tiriskan. 100 gr salted squid, wash, soak and strain.
2 buah terong ungu, potong. 2 pcs eggplan, cut.
6 buah tomat hijau, belah 4. 6 pcs green tomato, cut in 4.
1 buah cabe merah, iris serong, 1 pcs red chili, oblique.
1 buah cabe hijau, iris serong, 1 pcs green chili, oblique.
5 buah cabe rawit, iris serong (sesuai selera) 5 pcs chili padi, oblique (taste to desire).
1 btg sereh, keprak. 1 stalk lemongrass, crust.
1 lbr daun salam. 1 pcs bayleaf.
4 lbr daun jeruk. 4 pcs lime leaves.
3 cm lengkuas, keprak. 3 cm galangal, crust.
Garam, gula dan lada secukupnya. Some salt, sugar and pepper.
2 sdm minyak sayur. 2 tbsp veggie oil.
50 gr daun kemangi. 50 gr thai basil leaves.
50 gr pete, belah 2. 50 gr sticky beans, cut on 2
30 ml air panas. 30 ml hot water.

Bumbu halus/ground spices:
5 buah bwng merah. 5 pcs shallot.
3 siung bwng putih. 3 cloves garlic.
2 cm jahe. 2 cm ginger.
2 cm kencur. 2 cm fragrant ginger.

Cara/method:
1. Goreng sebentar cumi, tiriskan. Fried awhile the squid, strain.
2. Goreng sebentar terong, tiriskan. (aku pakai air fryer 180C selama 6 menit) fried awhile eggplan, strain. (i used air fryer 180C for 6 minutes)
3. Panaskan minyak dan tumis bumbu halus bersama sereh, daun salam, lengkuas dan daun jeruk hingga harum. Heat oil and saute ground spices with lemongrass, beyleaf, galangal and lime leaves until fragrant.
4. Masukkan cumi, terong, tomat, pete dan cabe, aduk rata, tambahkan air. Add squid, eggplant, tomato, sticky beans and chilies, stir well, add water.
5. Masukkan garam, lada, dan gula aduk rata hingga air menyusut. Masukkan daun kemangi. Aduk. Add salt, pepper and sugar, stir well until reduced the water. Add thai basil leaves, stir.
6. Sajikan bersama menu lain. Serve on other side dish.
