TAHU CAMPUR LAMONGAN

Bahan/ingredients:
500 gr otot sapi. 500 gr cow muscle.
500 gr sandung lamur. 500 gr brisket.
3000 ml. 3000 ml water.
2 lbr daun salam. 2 pcs bayleaf
10 lbr daun jeruk. 10 pcs lime leaves.
2 btg sereh, keprak. 2 stalk lemongrass, crush
3 cm lengkuas, keprak. 3 cm galangal, crush
3 cm jahe, keprak. 3 cm ginger, crush
2 sdm gula merah (sesuai selera). 2 tbsp brown sugar (season as desire)
2 sdm minyak sayur. 2 tbsp veggie oil.

Bumbu Halus/ground spices:
8 buah bwng merah. 8 pcs shallot.
12 siung bwng putih. 12 clove garlic.
1 sdt jintan bubuk. 1 tsp cumin powder
½ sdm ketumbar bubuk. ½ tbsp coriander.
4 cm kunyit bakar. 4 cm grilled turmeric.
Garam secukupnya (sesuai selera). Some salt.(taste as desire)
1 sdt lada bubuk. 1 tsp pepper powder.

Perkedel Singkong – Cassava cake
1. Bahan/ingredients:
300 gr singkong parut, peras buang air. 300 gr grated cassava, squeeze to reduced water.
3 lbr daun jeruk, iris halus. 3 pcs lime leaves, finely slice.
Minyak goreng, untuk menggoreng. Oil for deepfry.
2. Bumbu Halus/ground spices:
3 siung bwg putih. 3 clove garlic.
½ sdt jintan bubuk. ½ tsp cumin powder.
1 sdt ketumbar bubuk. 1 tsp coriander.
½ sdt garam. ½ tsp salt.
1 cm kunyit. 1 cm turmeric.
1 cm kencur. 1 cm fragrant ginger.

Pelengkap/complimentary:
Sambal rawit garam. Sambal chili padi salt
Petis (petis tahu & bwg putih goreng). Shrimp paste (shrimp paste & fried garlic)
250 gr mie basah. 250 gr fresh noodle.
250 gr toge rebus. 250 gr boiled beansprout.
250 gr daun selada keriting, iris. 250 gr salada, slice
Tahu Goreng, iris. Fried tofu, slice
Krupuk sesuai selera. Crackers of your desire.

Cara/method:
A. Memasak daging/how to cook beef soup:
1. Didihkan air, masukkan daging dan rebus 10 menit, buang air. Boiling water, add beef, and boiling for 10 minutes, throw away the water.
2. Didihkan 3000 ml air. Boiling 3000 ml water.
3. Panaskan minyak, tumis bumbu halus bersama sereh, daun jeruk, jahe dan lengkuas hingga harum dan terakhir masukkan gula merah, aduk. Heat oil, saute ground spices with lemongrass, lime leaves, ginger and galangal and last brown sugar, stir.
4. Masukkan daging dan otot sapi aduk rata. Add beef and cow muscle, stir well.
5. Masukkan ke dalam slow cooker dan tuang air mendidih, setting di high (1 jam) dan biarkan masak hingga empuk dgn merubah setting di low/warm(4 jam). Add into slow cooker and pour the boiled water, setting high (for 1 hour) and cook until tender adjust setting into low/warm (4 hours)

B. Membuat perkedel singkong/how to make cassava cake:
1. Campur singkong parut dan bumbu. Mix grated cassava with spices
2. Panaskan minyak. Bentuk perkedel singkong dan goreng hingga keemasan.
Heat oil, make shape cassava cake and fried until golden.
3. Potong. Cut

C. Cara menyajikan/how to serve:
1. Campur petis dan sambal, taruh toge, selada, perkedel singkong, tahu goreng dan mie. Mix shrimp paste and sambal, place bean sprout, selada, cassava cake, fried tofu and noodle.
2. Tuangkan daging dan sup serta beri kerupuk.

Note:
Utk memasak otot sapi dan tulang muda dgn slow cooker memakan waktu 5-6 jam. For cooking coww muscle and xartilage with slowcooker need 5-6 hours until tender.

Utk memasak dagung sapi smp empuk dm slow cooker memakan waktu 4 jam. For cooking beef until tender using slow cooker need 4 hours.
