Kue Ijo – Green Cake

KUE IJO – KUE LUMPANG

Bahan/Ingredients:
90 gr tepung beras. 90 gr rice flour.
40 gr tepung maizena. 40 gr cornstrach.
20 gr tepung hunkwee. 20 gr mung bean starch.
60 gr gula pasir. 60 gr granulated sugar
200 ml santan kental. 200 ml heavy coconut milk. (kara)
50 ml air daun pandan (dr 20 lbr daun suji & 5 lbr pandan). 50 ml pandan water (from 20 suji leaves + 5 pandan leave)
½ sdt garam. ½ tsp salt.

Taburan/topping:
Kelapa parut yang tidak terlalu tua secukupnya,sedikit garam dan kukus. Grated coconut which is not too old to taste, a pinch of salt and steamed.

Cara/method:
1. Campurkan tepung beras, tepung kanji, tepung hunkwe, gula pasir dan garam dalam satu wadah, aduk hingga merata. Mix rice flour, cornstarch, mung bean flour, granulated sugar and salt on a bowl, stir well.
2. Tuang santan sedikit demi sedikit sambil diuleni. Pour step by step coconut milk while knead
3. Tambahkan air pandankedalam adonan, aduk hingga merata. Add pandan water, stir well.
4. Oles cetakan dgn minyak.Tuang adonan kue kedalam cetakan. Greasing the mold with oil, pour the batter on mold.
5. Kukus selama 25 menit. Steam for 25
minutes.
6. Keluarkan dr cetakan. Siap disajikan dengan taburan kelapa parut. Take out from the mold. Ready to serve and sprinkle with coconut.

Note:
Kalo menggunakan cetakan silikon tdk perlu dioles minyak terlebih dahulu. If you use silicon mold, no need to greasing with oil.
