Lontong Sayur – Rice Cake In Coconut Milk

LONTONG SAYUR – RICE CAKE IN COCONUT MILK SOUP

Bahan/ingredients:
500 gr pepaya muda/labu siam iris memanjang. 500 gr young papaya fruit/chayote. Jullien
10 btg kacang panjang, potong 3 cm. 10 stalks long bean, cut 3 cm.
3 cm lengkuas, keprak. 3 cm galangal, crust.
2 btg serai, keprak. 2 stalks lemongrass, crust.
4 daun salam. 3 pcs bayleaf.
1000 ml santan encer. 1000 ml light coconut milk.
500 ml santan kental. 500 ml heavy coconut milk.
500 ml air. 500 ml water.
600 gr beras utk membuat lontong. 600 gr rice for make rice cake.
Daun pisang utk membuat lontong secukupnya. Some banana leave for cook rice cake.
6 cetakan lontong. 6 pcs rice cake mold

Bumbu/spices:
10 btr bwg merah. 10 pcs shallot.
6 siung bwg putih. 6 cloves garlic
4 btr kemiri. 4 pcs candle mut.
3 buah cabe merah. 3 pcs red chili.
Garam, lada dan gula secukupnya. Some salt, pepper and sugar.
1 sdt terasi. 1 sdt shrimp paste.
2 sdm ebi, sangrai dan haluskan. 2 tbsp dried shrimp, roasted and ground.
2 sdm minyak utk menumis. 2 tbsp oil for saute.

Pelengkap/complimemtary:
Semur tahu dan telur. Semur Tofu and egg.
Lontong. Rice cake.
Bwg merah goreng. Fried shallot
Sambal.
Krupuk. Crackers.

SEMUR TAHU DAN TELUR

Bahan/ingredients:
6 telur rebus. 6 pcs boiled egg.
1 buah tahu besar, potong. 1 pcs big tofu, cut.
2 daun salam. 2 pcs bayleaf.
3 kantung teh. 3 tea bag.

Bumbu/seasoning:
1 sdm bwg putih goreng. 1 tbsp fried garlic.
1 sdm bwg merah goreng. 1 tbsp fried shallot.
½ buat pala. ½ pcs nutmeg.
½ sdt lada. ½ tsp pepper.
2 sdt garam. 2 tsp salt
5 sdm kecap manis. 5 tbsp dark sweet soy sauce.
750 ml air. 750 nl water.

Cara/method:
1. Membuat sayur/how to cook veggie soup:
** haluskan bumbu dan tumis hingga matang, masukkan ebi, aduk rata. Ground and saute the spices until well done, add ground dried shrimp, stir well
** masukkan pepaya/labu siam, aduk rata. Add young papaya fruits/chayote, stir well
** didihkan santan encer dan air, masukkan bahan diatas masak hingga pepaya/labu siam 75% matang, masukkan kacang panjang aduk rata. Boiling light coconut milk amd watwr, add ingredients on top until the young papaya fruit/chayote 75% cooked, add long bean, stir well.
** masukkan santan kental dan aduk, masak dgn api kecil. Add heavy coconut milk and stir, simmer.

3. Membuat semur Tahu dan Telur/how to make Semur Tofu and Egg:
** didihkan air bersama teh kantung dan daun salam. Boiling water with tea bags dan bayleaf.
** haluskan pala, bwg merah dan bwg putih goreng.
** masukkan kedalam air mendidih. tambahkan kecap manis, lada dan garam, aduk, masukkan tahu serta telur rebus, masak hingga berubah warna. Matikan api. Add into the boiled water, add dark sweet soy sauce, pepper and salt, stir, add tofu and egg, cook until changing color. Switch off the stove.
4. Cara menyajikan/How to serve:
** potong lontong dan taruh pada mangkok, siram kuah sayur panas, beri semur tahu dan telur, taburi bwg merah goreng, dan sajikan dgn krupuk dan sambal. Cut the rice cake, and put on the bowl, pour with hot veggie soup, put the semur tofu and egg, sprinkle with fried shallot and sambal.
