RUJAK KHAS MADURA – MADURANESE ROJAK

Bahan/ingredients:
1 ikat kangkung, petik, cuci dan rebus sebentar. A bundle of kangkong, pick, wash and boiling awhile.
100 gr toge rebus sebentar. 100 gr bean sprout, boiling awhile.
10 btg kacang panjang, potong, cuci dan rebus. 10 stalks long bean, cut, wash and boiling.
Timun iris. Sliced cucumber
1 buah tahu putih besar, goreng dan iris. 1 pcs big white tofu, frying and slice.
4 iris tempe, goreng dan iris. 4 slices tempeh, frying and slice
Krupuk pilihan. Cracker your choice. (Maduranese like to eat with cassava crackers)

Nasi or lontong. Rice or rice cake.

Bumbu/seasoning:
50 gr kacang tanah goreng. 50 gr fried peanut
1 pot petis shrimp madura. A pot of maduranese shrimp paste
1 sdt Terasi. 1 tsp belacan.
Cabe rawit secukupnya. Some chili.
2 sdm bwg putih goreng. 2 tbsp fried garlic.
½ sdm gula merah. ½ tbsp brown sugar.
Air panas secukupnya. Some hot water.
Garam secukupnya. Some salt

Cara/method:
1. Haluskan dan campur bahan bumbu. Ground and mix seasoning.
2. Tata diatas daun bahan dan beri bumbu diatasnya. Serve all ingredients on banana leaf and put seasoning on top.
3. Sajikan dgn krupuk. Nasi atau lontinh. Serve with crackers, rice or rice cake.
