Nasi krawu adalah makanan khas dari kota Gresik, Jawa Timur. NASI krawu originaly from Gresik City, East Java

N A S I K R A W U

Bahan/ingredients:
1000 gr daging sapi. 1000 gr beef.
750 ml air kelapa. 750 ml coconut water.
2 lbr daun salam. 2 pcs bay leaf.
2 btg serai, keprak. 2 stalks lemongrass,crust.
1 buah nanas, kupas dan belah 4. 1 pcs pineapple, cut on 4.
3 cm jahe. 3 cm ginger.
100 ml santan kental. 100 ml heavy coconut milk

Bumbu halus/ground spices:

15 btr bwg merah. 15 pcs shallot.
8 siung bwg putih. 8 vloves garlic.
4 cm lengkuas, parut. 4 cm galangal, grated.
4 cm kunyit. 4 cm turmeric.
1 sdm ketumbar bubuk. 1 tbsp coriander powder.
4 sdm gula merah. 4 tbsp brown sugar.
2 sdm air asam. 2 tbsp tamarind water.
Garam secukupnya. Some salt.
3 sdm minyak sayur. 3 tbsp veggie oil.
2 lbr daun salam. 2 pcs bay leaf.
2 btg sereh, keprak. 2 stalks lemongrass, crust.

Pelengkap/complimentary:
Nasi putih. Rice.
Srundeng kelapa 2 warna. Roasted 2 tones coconut.
Sambal petis. Sambal shrimp paste.

Cara/method:
1. Didihkan air kelapa bersama jahe, daun salam, sereh dan nanas, masukkan daging sapi. Rebus hingga daging empuk. Boiling coconut water with ginger bay leaf. Lemon grass and pineapple. Add beef. Boiling until beef tender.
2. Haluskan bumbu kecuali air asam dan garam dan sisihkan. Ground spices accept salt and tamarind water and set aside.
3. Angkat daging yg sdh empuk, biarkan suhu ruang dan suwir2. Lift up tendered beef, let’s room temperature and shredded.
4. Panaskan minyak, tumis bumbu dgn daun salam dan sereh hingga harum, masukkan daging suwir, tambahkan air rebusan secukupnya dan masak hingga bumbu meresap. Heat oil and saute the ground spices with bay leaf and lemongrass until fragrant, put shredded meat, add some boiling water and cook until flavors mingle.
5. Masukkan santan kental dan air asam, masak hingga santan menyusut, masukkan garam, aduk rata dan daging terlihat kering. Add coconut milk and tamarind water, cook until reduced the coconut milk. Add salt. Stir well and the beef look dry.
6. Sajikan bersama pelengkap.

Note:
bisa menggunakan presto selama 15 menit. Can be use presure cooker for 15 minutes.
