Ayam Goreng Kanton – Cantonese Fried Chicken

AYAM GORENG KANTON – CANTONESE FRIED CHICKEN

Bahan/ingredients:
1 ekor ayam probiotik.1 pcs probiotik whole chickens
Minyak utk menggoreng. Oil for deep fry

Bumbu perendam/marinade seasoning:
1 sdt garam. 1 tsp salt.
½ sdt lada putih. 1⁄2 tsp white pepper.
½ sdt jahe bubuk. ½ tsp ginger powder.
1 sdt bwg putih bubuk. 1 tsp garlic powder.
½ sdt ngohiong bubuk. ½ tsp chinese five spices

1 sdm kecap asin. 1 tbsp soy sauce.
2 tsp shaoxing wine

Pelengkap/complimentary
Campuran garam, ngohiong
bubuk dan lada.
Daun ketumbar. Cilantro.
Jeruk nipis. Lime.
Krupuk. Crackers.

Cara/method:

1. Belah ayam menjadi 2 bagian, keringkan dgn tisu dapur dan lumuri dgn ngohiong, garam, bwg putih bubuk, jahe bubuk dan oles dgn campuran kecap asin dan arak shao hsing, diamkan di kulkas semalam tanpa ditutup, letakkan ayam diatas rak dgn posisi kulit diatas. Fillet chicken into 2 part, pat it dry with kitchen towel and marinade with chinese five spices, salt, garlic powder, and ginger powder and brushing with mixed soy sauce and wine shao hsing. Let it sit in the fridge overnight without covering it, place the chicken with the skin side up.

2. Oven ayam selama 1 jam dgn suhu 200 C. Oven the chicken for an hour in 200 C
3. Siapkan minyak panas, masukkan ayam dan goreng hingga kecoklatan. Heat up oil and fry chicken until it turns brown
4. Sangrai lada bubuk, ngohiong dan garam. Roast grinded black pepper, chinese five spices, and salt.
5. Potong2 ayam dan sajikan dgn pelengkap. Cut the chicken in pieces and serve complimentary.
