TAHU ISI REBUNG – STUFFED TOFU with BAMBOO SHOOT

Bahan/ingredients:
20 buah tahu goreng segitiga, keluarkan isinya dan sisihkan. 20 pcs triangle fried tofu, remove the contents and side aside.
Cabe rawit secukupnya. Some chili padi.

Bahan isi/filling:
3 btg wortel, parut kasar. 3 stalks carrot, coarsely grated.
200 gr toge. 200 gr bean sprout.
300 gr rebung iris halus, rebus 3x dan peras. 300 gr finely slice bamboo shoot, boil 3 times and squeeze.
20 gr daun ketumbar, iris halus. 20 gr cilantro, finely slice.
2 btg daun bawang, iris halus. 2 stalks green onion, finely slice.
6 siung bawang putih, cincang. 6 cloves garlic, chop.
4 btr bwg merah, cincang. 4 pcs shallot, chop.
½ sdm saus tiram. ½ tbsp oyster sauce.
Garam dan lada secukupnya. Some salt and pepper.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for saute.

Saus petis/shrimp paste sauce:
6 sdm petis Makasar. 6 tbsp Makasar shrimp paste..
4 siung bwg putih, parut. 4 cloves garlic, grated
50 ml air panas. 50 ml hot water.

Adonan pencelup/dipping batter:
8 sdm tpg beras. 8 tbsp rice flour.
1 sdm terigu utk kue. 1 tbsp cake flour.
Garam, lada dan bwg putih bubuk secukupnya. Some salt, pepper and garlic powder.
Air dingin secukupnya. Some cold water.

Cara/method:
1. Membuat isian/how to cook the filling:
Panaskan minyak, masukkan bwg merah dan putih cincang, tumis hingga harum. Masukkan wortel dan rebung aduk hingga layu, masukkan toge, aduk. Masukkan saus tiram, garam dan lada, aduk rata, Sisihkan. Heat veggie oil, add chopped shallot and garlic, saute until fragrant. Add carrot and bamboo shoot, stir until wilted, add bean sprout. Add oyster sauce. Salt and pepper, stir well. Set aside.
2. Aduk rata bahan pencelup hingga cukup kekentalannya, sisihkan. Mix well dipping batter, until sufficient viscosity, set aside
3. Masak saus petis, sisihkan. Cook shrimp paste sauce, set aside.
4. Panaskan minyak. Heat oil.
5. Masukkan isian ke dalam tahu, dan celupkan ke adonan dan masukkan ke minyak panas, goreng hingga kering. Enter the stuffing into the tofu, and dip it into the batter and insert it into the hot oil, fry until crispy.
6. Sajikan hangat dgn saus petis dan cabe rawit. Serve warm with shrimp paste sauce and chili padi.
