Sup Daging Sapi ala Taiwan – Taiwanese Beef Noodle

SUP DAGING SAPI ala TAIWAN -TAIWANESE BEEF SOUP

Bahan/ingredients:
1000gr daging sengkel. 1000gr beef shark/chuck.
Mie sesuai selera. Noodle favorite.
1000 ml air utk merebus daging. 1000 ml water for boiling beef.
10 buah jamur shiitake. 10 pcs shiitake mushroom.

Bumbu utk merebus daging/seasoning for boiling beef:
½ sdt lada shezhuan utuh. ½ tsp whole shezhuan peppercorn.
½ sdt lada hitam utuh. ½ tsp whole black pepper.
5 buah pekak/bunga lawang. 5 pcs star anis.
2 cm jahe, iris. 2 cm ginger, slice.
2-3 sdm kecap manis. 2-3 tbs dark soy sauce.
1 sdm kecap cap jamur. 1 tbsp mushroom soy sauce
1 sdm kecap asin. 1 tbs soy sauce.
1 sdm kecap raja rasa (bila ada). 1 tbs raja rasa soy sauce (optional).
5 siung bwg putih. 5 cloves garlic
3 bunga cengkeh. 3 pcs cloves.
Garam secukupnya. Some salt to taste.

Cara/Methods:

1. Rebus air, masukkan daging dan jamur. Boiling water, add beef and mushroom.
2. Masukkan bumbu rempah kecuali kecap manis, kecap asin, kecap raja rasa dan shao shing kedalam kantung rempah. Dan masukkan kantung ke dlm rebusan daging bersama bumbu lainnya. Add all herbs into herbs bag accept dark soy sauce, soy sauce, raja rasa soy sauce and xaoxing. Add herbs bag into boiling beef and all other seasoning.
3. Rebus dgn api kecil hingga daging empuk, angkat dan potong2. Simmer until beef tender, lift up and cut the beef.

Note:
1. Bisa menggunakan slow cooker utk memasaknya. Can be use slow cooker.
2. Bisa disajikan dgn misua, bihun, mie or nasi. Can be serve with misua, rice noodle, noodle or rice.
3. Dapat disajikan dgn sambal cabe garam. Cab be serve with sambal chili and salt.
4. Dpt ditaburi bwg daun atau daun ketumbar. Can be sprinkle with green onion or cilantro
