SROTO SOKARAJA BANYUMAS

Bahan/ingredients:
1 ekor ayam kampung besar. 1 pcs big size farmer chicken.
2000 ml air. 2000 ml water
2 cm lengkuas, keprak. 2 cm galangal, crust.
4 lbr daun salam. 4 lbr bayleaf.
2 cm jahe, keprak. 3 cm ginger, crust.
2 btg sereh, keprak. 2 stalks lemongrass
Minyak utk menggoreng ayam. Oil for frying chicken.

Bumbu halus/ground spices:
Garam dan gula secukupnya. Some salt and sugar.
70 gr bawang merah. 70 gr shallot.
30 gr bawang putih. 30 gr garlic.
6 butir kemiri. 6 pcs candle nut.
3 cm kunyit bakar. 3 cm roasted turmeric.
1 sdt lada bubuk. 1 tsp pepper powder.
2 sdm minyak utk menumis. 2 tbsp oil for saute.

Sambal kacang/Sambal peanut:
100 gr kacang tanah sangrai. 100 gr roasted peanut.
6 btr bawang merah. 6 pcs shallot.
4 siung bawang putih. 4 cloves garlic.
8 buah cabai rawit. 8 pcs chili padi.
2 cm kencur. 2 cm fragrant ginger.
1 sdt garam. 1 tsp salt.
½ sdt gula merah. ½ tsp brown sugar.
140 ml air panas. 140 ml hot water
½ sdm minyak utk menumis. ½ tbsp oil for saute

Sambal Rawit/sambal chili padi:
100 gr rawit merah. 100 gr red chili padi.
4 siung bawang putih. 4 cloves garlic.
4 btr bawang merah. 4 pcs shallot.
½ sdt garam. ½ tsp salt.

Pelengkap/complementary:
100 gr mie soun. 100 gr glass noodle
100 gr touge. 100 gr bean sprout
4 buah telur rebus, bagi 2. 4 pcs boiled egg, cut on 2.
Jeruk karturi/nipis. Calamansi/lime
Lontong/nasi. Rice cake/rice.

Taburan/topping:
Seledri. Celery
Daun bawang. Scallion.
Bawang putih goreng. Fried garlic
50 gr kacang kedelai sangrai (selera, aku ga pakai). 50 gr fried soya bean.(Optional, I don’t use)
Kerupuk kanji warna merah(boleh diganti). Red sago cracker. (optional). Aku pakai emping. I use emping crackers.

Cara/method:
1. Didihkan air dan masukkan ayam bersama sereh, lengkuas, daun salam, jahe. Boiling water and add chicken with lemongrass galangal, bayleaf, ginger.
2. Haluskan dan tumis bumbu halus hingga halus, masukkan dlm sup dan masak dgn api kecil hingga ayam empuk. Ground and saute ground spices until fragrant, add in chicken soup, simmer until chicken tender.
3. Panaskan minyak, goreng ayam dan suwir. Heat oil, fried chicken and shrended.
4. Haluskan bumbu kacang dan tumis. Ground sambal peanut and saute.
5. Kukus cabe, bawang merah dan bawang putih. Haluskan bersama garam. Steam chili padi, shallot and garlic. Ground with salt.
6. Sajikan sroto panas bersama nasi/lontong, pelengkap serta taburan serve sroto hot with rice/rice cake, complementary, and topping.
