Nasi Ayam Hainan – Hainan Chicken Rice


NASI AYAM HAINAN – HAINAN CHICKEN RICE

Bahan/ingredients:
1 ekor ayam probiotik utuh, bersihkan isi perut potong kaki. 1 pcs probiotic chicken, clean the stomach, cut out the leg.
4 iris jahe. 4slices ginger.
2 buah daun bawang, ikat. 2 stalks spring onion, tied.
6 sung bwg putih. 6 cloves garlic
Garam secukupnya utk melumuri ayam. Some salt for marinate chicken.
2000 ml air utk merebus ayam. 2000 aml water for boiling chicken.

Saus merah/Red sauce:
2 buah cabe merah, buang biji. 2 pcs red chili, seedless.
4 buah cabe merah kriting. 4 pcs curly red chili.
6 siung bwg putih. 6 cloves garlic.
6 iris jahe kupas. 6 slices peeled garlic.
6 buah jeruk kasturi, ambil airnya. 6 pcs calamansi juice.
1 sdt garam. 1 tsp salt.
1 sdt gula. 1 tsp sugar.
80 ml kaldu ayam. 80 ml chicken stock
½ sdm minyak wijen. ½ tbsp sesame oil.

Saus jahe/Ginger sauce:
2 cm jahe kupas. 2 cm peeled ginger
5 siung bwg putih. 5 cloves garlic.
4 buah bwg merah. 4 pcs shallot.
½ sdm minyak wijen. ½ tbsp sesame oil.
2 sdm minyak salad. 2 tbsp salad oil.
½ sdt garam. ½ tsp salt
¾ sdt gula. ¾ tsp sugar.
30 ml kaldu ayam. 30 ml chicken stock.

Nasi hainan/hainanese rice:
450 gr beras. 450 gr rice
50 gr ketan. 50 gr glutinous rice
Cuci dan rendam air 1 jam. Wash and soak in the water for 1 hour.
1 bongkah bwg putih belah tanpa kupas. A bulb of garlic, cut a half with put peel the skin.
4 lbr daun pandan. 4 pcs pandan leaf.
3 iris jahe. 3 slice ginger.
2 iris kencur. 2 slice fragrant ginger.
3 iris lengkuas. 3 slices galangal.
1000 ml kaldu ayam. 1000 ml chicken stock.
1 sdm minyak sayur. 1 tbsp veggie oil.
½ sdm minyak wijen. ½ tbsp sesame oil.

Saus utk ayam/sauce for chicken:
¼ cup kaldu ayam. ¼ cup chicken stock.
1 sdm kecap asin. 1 tbsp soy sauce.
1 sdt gula. 1 tsp sugar.
1 sdt minyak wijen. 1 tsp sesame oil.

Pelengkap/complimentary:
Daun ketumbar. Cilantro
Timun, belah 2, iris halus. Cucumber, cut on 2, finely slice

Cara/method:
1. Lumuri ayam bag dalam dan luar dgn garam. Masukkan jahe, daun bawang dan bwg putih ke perut ayam, semat rapat dgn tusuk gigi.. Marinate in and out side of chicken with salt. Enter ginger, spring onion and garlic, pin-tight with a toothpick.
2. Didihkan air. Pegang 1 bagian kaki ayam dan siram dgn air mendidih. Masukkan ayam dan rebus hingga mendidih selama 10 menit. Matikan api dan tutup kompor biarkan ayam di dalam panci selama 1 jam atau lebih. Boiling water. Hold a part of chicken leg, pour all body of chicken with hot water. Add chicken into boiling water, and boiling for 10 minutes. Turn off the stove and cover a pan, let’s stand chicken for an hour or more.
3. Cuci dan rendam beras dan ketan selama 1 jam, tiriskan. Wash and soak rice and glutinous for an hour. Strain.
4. Panaskan minyak sayur dan minyak wijen. Masukkan dan tumis jahe, lengkuas, kencur dan bwg putih hingga harum. Masukkan beras dan timis hingga harum, pindahkan ke dlm rice cooker, tambahkan pandan dan kaldu ayam, heat veggie oil and sesame oil. Add and saute ginger and garlic until fragrant. Add rice and saute until fragrant, transfer the rice into rice cooker,add pandan leaf and chicken stock.

5. Membuat sambal merah/how to cook red sambal: blender cabe, bwg putih, jahe, garam, gula dan kaldu ayam hingga halus dan didihkan. Tambahkan air jeruk kasturi, aduk rata. Blender chili, garlic, ginger, salt, sugar and chicken stok until smooth and boiling. Add calamansi juice, stir well.
6. Memasak saus jahe/how to cook ginger sauce: blender halus semua bahan saus jahe. Dan rebus hingga didih. Finely blender all ingredients of ginger saus. And boiling awhile.
7. Siapkan air es. Angkat ayam dan masukkan dlm air es, diamkan selama 15 menit, tiriskan. Prepare ice water. Lift up chicken and enter into ice water, let’s stand for 15 minutes, strain.

8. Keluarkan jahe, bwg putih, dan bwg daun dr perut ayam, potong ayam. Take out ginger, garlic and spring onion from chicken stomach, cut chicken.
9. Iris timun tipis dan letakkan di pinggir piring. Letakkan irisan ayam di piring. Finely slice cucumber and put on side of dish. Place the chicken on dish.
10. Campur bahan saus ayam dan siramkan diatas ayam. Hias dgn daun ketumbar. Sajikan bersama nasi hainan, sup dan saus sambal. Mix sauce ingredients and pour on top of chicken. Garnish with cilantro and serving with hainan rice, soup, red sauce and ginger sauce.

Note:
Utk ayam kampung besar di rebus 15-20menit. For farmer chicken big size, boiling for 15-20 minutes
