LONTONG BALAP

Bahan/ingredients:
500 gr toge, petik ekor dan bersihkan kulit nya. 500 gr bean sprout, pick the tail and the skin.
3 btg bwg daun, pot 2 cm. 3 stalks green onion, cut 2 cm.
2 btg seledri. 2 stalks celery.
1 lbr daun salam. 1 pcs bay leaf.
1 cm jahe, keprak. 1 cm ginger, crust.
1 cm lengkuas, keprak. 1 cm galangal, crust.
5 butir bwg merah, iris tipis. 5 pcs shallot, finely slice.
3 siung bwg putih, iris tipis. 3 cloves garlic, finely alice.
½ sdt merica bubuk. ½ sdt pepper powder
2 sdt garam. 2 tsp salt.
2000ml air matang/kaldu ayam. 2000 ml water/chicken broth.
1 sdm minyak utk menumis. 1 tbsp oil for saute.

Sambal Petis:
3 sdm petis utk makan tahu goreng (bukan petis udang. 3 tbsp petis for fried tofu (not shrimp paste)
10-15 rawit merah, haluskan. 10-15 red chili padi. Ground.
1 sdm bwg putih goreng, haluskan. 1 tbsp fried garlic, ground.
Garam secukupnya. Some salt
50ml air panas. 50 ml hot water.

Pelengkap/complimentary.
Bwg goreng. Fried shallot.
Kecap manis. Dark sweet soy sauce.
4 bungkus lontong. 4 pcs rice cake.
1 buah tahu besar, potong2 besar, goreng, iris. 1 pcs big tofu, cut big size, frying and slice.
Lontong. Rice cake.

Cara/method:
1. Rebus air/kaldu ayam bersama daun salam, lengkuas dan jahe. Boiling water/chicken broth with bay leaf, galangal and ginger
2. Tumis bwg putih dan bwg merah hingga harum, masukkan dlm panci rebusan air. Saute garlic and shallot until fragrant, and add into boiling water.
3. Bila air sdh mendidih masukkan toge dan pot bwg daun. If water boiled already. Add bead sprout and green onion.
4. Campur dan masak sambal petis. Mix and cook sambal petis.
5. Cara penyajian/how to serve: letakkan irisan lontong, toge dan kuah dlm mangkuk/piring, tambahkan lento di patah2, tahu goreng, sambal petis dan taburan bwg goreng. Place rice cake, beansprout, and soup on bowl/plate. add broked lento, fried tofu, sambal petis and sprinkle with fried shallot.
