Sate Kelapa Madura – Madurese Beef Coconut Satay


SATE KELAPA MADURA – MADURESE BEEF COCONUT SATAY

Untuk 30 tusuk. For 30 skewers.

Bahan/ingredients:
400 gr daging sapi has luar, dipotong-potong. 400 gr sirloin, cut.
½ sdt garam. ½ tsp salt.
¼ sdt lada bubuk. ¼ tsp pepper powder.
½ sdt ketumbar. ½ tsp coriander.
¼ sdt jintan bubuk. ¼ tsp cumin powder.
2 sdt nanas parut. 2 tsp grated pineapple.
Tusuk sate secukupnya. Some skewer.
200 gr kelapa parut kasar. 200 gr roughly grated coconut.

Bumbu utk kelapa/spices for coconut:
10 btr bawang merah. 10 pcs shallot.
5 siung bawang putih. 5 cloves garlic
4 cm kunyit bakar. 4 cm roasted turmeric.
2 sdt ketumbar. 2 tsp coriander.
1½ sdt garam. 1½ tsp salt.
½ sdm gula pasir. ½ tbsp sugar.

Saus kacang/peanut sauce:
200 gr kacang tanah kulit, digoreng, haluskan. 200 gr peanut without skin, fried
4 buah cabe merah keriting, 4 pcs curly red chili.
4 buah bwg merah. 4 pcs shallot.
2 buah bwg putih. 2 pcs garlicyŤP
50 gr gula merah. 50 gr brown sugar.
1 sdt garam. 1 sdt salt.
300 ml air panas. 300ml hot water.

Pelengkap/complimentary:
Bawang merah iris secukupnya. Some sliced shallot.
Kecap manis secukupnya. Some dark sweet soy sauce.
Cabe rawit secukupnya. Some chili padi.
Jeruk nipis secukupnya. Some lime juice.
Lontong atau nasi. Rice cake or rice.
Srundeng.

Cara/method:
1. Lumuri daging sapi dgn garam, ketumbar, jintan, nanas parut dan lada. Diamkan 1 jam atau semalam di lemari es. Marinate beef with salt, coriander, cumin, grated pineapple and pepper. Refrigerate for 1 hour or a nite.
2. Tusuk daging sapi dgn tusuk sate. Sisihkan. Skewer the beef, set aside.
3. Membuat kelapa berbumbu/how to make spiced coconut: haluskan bumbu dan aduk rata pada kelapa parut. Grind the spice and stir well with grated coconut.
4. Bungkus sate daging dgn kelapa berbumbu. Sisa kelapa berbumbu sangrai kering utk srundeng. Cover beef satay with spiced coconut. The rest of spiced coconut, roasted to dry to srundeng.

5. Bakar sate hingga matang dan harum. Grill satay till well done and fragrant.

6. Membuat saus kacang/how to cook peanut sauce: goreng cabe, bwg merah dan bwg putih, tiris. Masukkan semua bahan saus kacang pada blender dan proses hingga halus. Frying chili, shallot and garlic. Enter and process all peanut sauce ingredients with blender til smooth.
7. Sajikan sate daging kelapa bersama bumbu kacang yg di campur dgn kecap manis & jeruk nipis serta pelengkapnya. Serve beef coconut satay with peanut sauce mix with dark sweet soy sauce & lime and complimentary.
