Bubur Ayam Cikini – Cikini’s Chicken Porridge


BUBUR AYAM CIKINI – CIKINI’S CHICKEN PORRIDGE</strong>

Bahan bubur/porridge ingredients:
250 gr beras, cuci dan rendam air semalam. 250 gr rice, wash and soak on water a nite.
2000 ml air/kaldu ayam 2000 ml water/chicken broth.
2 lbr daun salam. 2 pcs indonesia bay leaf.
2 btg sereh, keprak. 2 stalks lemongrass, crust
2 iris lengkuas. 2 slices galangal.
Garam secukupnya.
1 iris jahe. A slice of ginger.
30 ml santan kental. 30 ml heavy coconut milk. (Kara)
1 sdm minyak wijen. 1 tbsp sesame oil.
Garam dan lada secukupnya. Some salt and pepper.

Tumis Ayam/ sauteed chicken:
½ ekor ayam kampung ukuran sedang.
2000 ml air. 2000 ml water.
Garam dan lada secukupnya. Some salt and pepper.
1 sdm kecap asin. 1 tbsp soy sauce.
2 siung bawang putih, cincang halus. 2 cloves garlic, finely chop.
1 sdm minyak sayur. 1 tbsp veggie oil.

Kuah kuning/yellow stock:
6 siung bawang putih. 6 cloves garlic
3 buah bawang merah. 3 pcs shallot.
1 sdm ketumbar. 1 tbsp coriander.
3 butir kemiri. 3 pcs candle nut
2 cm kunyit dibakar. 2 cm roasted turmeric.
½ sdt lada bubuk. ½ tsp pepper powder.
2 lbr daun salam. 2 pcs indonesia bay leaf.
5 lbr daun jeruk. 5 pcs lime leaves.
3 cm lengkuas, keprak. 3 cm galangal, crust.
1 cm jahe. 1 cm ginger.
2 btg sereh.2 stalks lemongrass.
Garam dan gula secukupnya. Some salt and sugar.
1500 ml kaldu ayam. 1500 ml chicken broth.
30 ml santan kental. 30 ml heavy coconut milk. (Kara)

Pelengkap/complimentary:
Kecap asin. Soy sauce.
Minyak wijen. Sesame oil.
Sambal bwg putih/Sambal garlic: 5 siung bwg putih. 5 cloves garlic.
15 buah cabe rawit merah. 15 pcs red chili padi.
4 buah cabe keriting. 4 pcs curly chili.
80 ml air panas. 80 ml hpt water.
Garam dan gula secukupnya. Some salt and sugar.

Soun goreng. Fried glass noodle.
Cakue.

Bwg merah goreng. Fried shallot.
Seledri, iris. Sliced celery.
Thongchai. Fermented radish.

Cara/method:
1. Memasak bubur/how to cook porridge:
** didihkan air, masukkan beras, daun salam, sereh, dan lengkuas, aduk dan masukkan air/kaldu ayam, sesekali aduk hingga matang. Boiling water, add rice, indonesia bay leaf, lemongrass and galangal.
** bila bubur mulai matang, tambahkan garam, santan dan minyak wijen, aduk rata. If you see the porridge cook already, add salt, coconut milk and sesame oil, stir well.
Note: aku memasak bubur dgn slow cooker. Pukul 5 pagi aku masukkan beras dgn air mendidih bersama sereh, lengkuas, daun salam dan jahe. Pkl 7:30 bubur diaduk dan tambahkan garam, lada santan danbminyak wijen. I cook the porridge with slow cooker. At 5 am I pour in the rice, with boiling water with lemongrass, galangal, indonesian bay leaf, and ginger. At 7:30 am I stirred the porridge and add some salt, pepper, coconut milk , and sesame oil.

2. Memasak Tumis Ayam/how to cook Sauteed chicken:
** didihkan air, masukkan ayam, rebus hingga cukup empuk, angkat dan tiriskan. Boiling watwr, add chicken, boiling until tender enough, lift up and set aside.
** potong kubus kecil daging ayam. Small cube chicken.
** panaskan minyak, tumis bwg putih hingga harum masukkan ayam dan tambahkan kecap asin, garam dan lada secukupnya. Sisihkan. Heat oil, saute garlic until fragrant, add chicken, soy sauce, some salt and pepper. Set aside.

3. Goreng soun kering hingga mekar dan tiriskan. Frying dry glass noodle until bloom and strain.

4. Cara masak kuah kuning/how to cook yellow stock:
** goreng bwg merah dan putih setengah matang, haluskan bersama bahan lain. 1/2 cook shallot and garlic, grind with other ingredients.
** masukkan bumbu ke dlm kaldu ayam didih, bersama jahe, lengkuas, daun salam dan sereh. Enter the spices into the boiling chicken broth with ginger, galangal, indonesia bay leaf and lemongrass.
** kecilkan api masukkan santan dan aduk rata. Matikan api. Turn low heat add coconut milk and stir well. Turn off the stove.


5. Membuat sambal bawang putih/how to cook sambal garlic:
Blender semua bahan dan rebus. Blender all ingredients and boiling.
6. Cara menyajikan/how to serve:
Siapkan mangkuk taruh diatasnya bubur secukupnya. Beri kecap asin, minyak wijen dan kuah kuning.

Letakkan cakue, tumis ayam, taburi bahan lainnya dan sajikan dgn sambal. Prepare a bowl, add some porridge. Add soy sauce, sesame oil, yellow stock and ginger. add cakue, sauteed chicken, and sprinkle with other complimentary and sambal.
