Pumpkin and Mushroom Soup

PUMPKIN & MUSHROOM SOUP

Bahan/ingredients:
1 buah labu kuning ukuran sendang kisaran 250-300 gr. 1 pumpkin medium size around 250-300gr.
15 buah jamur kancing segar, iris. 15 pcs champignon mushroom, slice.
400ml kaldu ayam. 400 ml chicken broth.
200 ml susu tawar segar. 200 ml plain fresh milk.
1 sdm parmesan parut. 1 tbsp grated parmesan.
30 gr keju cedar parut. 30 gr grated cheddar cheese.

Taburan/topping:
Cream masak utk topping. Cooking cream for topping (Elle & Vire)
Seledri kering. Dried celery.
Keju parmesan parut. Grated Parmesan cheese.
Roti tawar oven. Crouton.

Larutan pengental/thickener solution:
4 sdm terigu dan 40 ml air. 4 sdm flour and 40ml water

Bumbu/seasoning:
Garam laut secukupnya. Some sea salt.
Sedikit lada bubuk . A but of grated pepper.
½ sdt thyme kering. ½ tsp dried thyme.
2 sdt bwg putih bubuk. 2 tsp garlic powder (optional)
½ sdt oregano kering. ½ tsp dried oregano.

Cara/Method:
1. Belah labu kuning, buang bijinya, kukus hingga matang. Cut on 2 pumpkin , remove the seeds , steamed until cooked .
2. Ambil daging labunya dan lumatkan hingga halus dgn alat pelumat kentang. Take the pumpkin flesh and blend until smooth with a potato masher tool.
3. Masukkan kaldu ayam, labu dan bumbu, aduk rata dan masak diatas api sedang, hingga meletup, masukkan jamur, keju parmesan dan cedar, aduk. Add the chicken broth, pumpkin and seasoning, stir well and boiled over medium heat until explode, add mushroom, parmesan and cheddar cheese, stir.
4. Kentalkan dgn larutan terigu sambil diaduk rata. Thicken with flour, stirring.
5. Sajikan dengan cream masak diatasnya, dan beri taburan. Serve with cooking cream on top and sprinkle with topping.
