Sup Susu Kerapu dan Paria – Grouper and Bitter Gourd Milk Soup

SUP SUSU KERAPU & PARIA – GROUPER & BITTER GOURD MILK SOUP

Bahan/ingredients:
200 gr fillet kerapu. 200 gr filled grouper..
80 gr sawi asin, iris. 80 gr salted green mustard.
80 gr paria, iris tipis. 80 gr bitter gourd, fineliy slice.
50 gr wortel, iris serong. 50 gr carrot, finely oblique.
5 siung bwg putih, keprak. 5 cloves garlic, crust
2 cm jahe, iris serong. 2 cm ginger, oblique.
2 sdt ebi bubuk sangrai. 2 tsp roasted ground dried shrimp.
2 sdm arak shao sing. 2 tbsp wine shao sing.
½ sdm kecap ikan. ½ tbsp fish sauce.
Garam dan lada secukupnya. Some salt and pepper.
3 buah angco. 3 pcs chinese red date.
200 ml susu sapi segar hangat. 200 ml warm fresh milk.
300 ml air panas.
2 sdt minyak wijen. 2 tsp sesame oil.
3 btg daun bwg, iris utk taburan. 3 stalks scallion, slice and for topping.

Cara/method:
1. Didihkan air. Masukkan wortel, paria dan sawi asin. Boiling water. Add carrot, bitter gourd and salty green mustrad.
2. Bumbui ikan dgn lada, garam, jahe dan tpg sagu secukupnya lalu goreng hingga keemasan, sisihkan. marinate fish with some pepper, salt, ginger and corn flour, and tha fried the fish until holden, set aside.
3. Panaskan minyak wijen, tumis bwg putih, jahe dan angco hingga harum. Heat sesame oil, saute garlic, ginger and red date.
4. Masukkan ke dlm sup dan beri arak shao shing. Add into the soup and add shao sing wine.
5. Masukkan susu, garam, lada dan kecapnikan, aduk. Add milk, salt, pepper and fish sauce, stir well.
6. Sajikan soup panas, masukkan ikan goreng dgn taburan bwg daun. Serve hot soup, add fried fish and sprinkle with scallion.
