Bandeng Goreng Sambal Mangga – Fried Milkfish with Sambal Mango

Bahan/ingredients:
1 ekor Ikan bandeng belah. 1 pcs milkfish, cut
Segengam kemangi. A hand indonesia basil.
Atau bila kemangi tdk ada dgn petai. If donn’t have indonesia basil you can change with sticky bean.

Bumbu perendam bandeng/marinate for milkfish:
1 buah bwg merah. 1 pcs shallot.
2 siung bwg putih. 2 cloves garlic.
1 sdt ketumbar bubuk. 1 tsp coriander powder.
½ sdt garam. ½ tsp salt.

Sambal mangga/sambal mango:
½ buah mangga muda, potong korek api. ½ pcs rough mango, jullien.
2 buah cabe merah besar, cincang kasar. 2 pcs red chili, rough chop.
5 buah cabe rawit merah, iris halus. 5 pcs red chili padi, finely slice.
4 siung bwg putih, cincang, 4 cloves garlic, chop.
2 buah bwg merah, cincang. 2 pcs shallot, chop.
½ sdt garam . ½ tap salt.
1½ sdt gula merah. 1½ tsp brown sugar.
3 sdm minyak sayur. 3 tbsp veggie oil.

Cara/method:
1. Goreng bandeng. Letakkan di piring saji. Fried milkfish. Place on serving dish.
2. Panaskan minyak sayur. Tumis semua bahan kecuali mangga hingga matang. Heat veggie oil. Saure all sambal ingredients except mango.
3. Matikan api, masukkan mangga dan kemangi, aduk rata. Switch of the stove, add mango and indobesia basil, stir well.
4. Letakan sambal diatas bandeng. Put sambal on top of milkfish.
5. Sajikan dgn nasi hangat dan lalapan. Serve with warm rice and indonesian salad

Note:
Pilih Bandeng dgn berat 300-400gr. Choose milkfish with 300-400gr.
Lumuri tipis bandeng dgn tepung sagu or terigu spy saat di goreng tidak mletik2. Lightly coat milkfish with cornstarch or flour, so when you fry it the pil won’t splatter.
