Tumis Cumi Asin – Sauted Salted Squid

Bahan/ingredients:
200 gr cumi asin, cuci 5x dan rendam dgn air suhu ruang, potong. 200 gr salted squid, wash 5 timis adn soak eith room temperature water, cut.
100 gr tempe potong kotang kecil, goreng. 100 gr tempeh, cut small cube, fry it.
8 btg kacang pjg, cuci dan potong 1 cm. 8 stalks longbean, wash and cut 1 cm.
100 gr pete, belah. 100 gr sticky bean, cut on 2.
5 buah cabe rawit iris serong(sesuai selera) 5 pcs chili padi, oblique.(as your desire)
5 siung bawang putih, iris. 5 pcs garlic, slice
3 buah bwg putih, iris. 3 pcs shallot, slice.
2 cm lengkuas keprak. 2 cm galangal, crust.
2 cm jahe, keprak. 2 cm ginger, crust.
5 lbr daun jeruk. 5 pcs lime leave.
Garam dan lada secukupnya. Some salt and pepper.
1 sdm air asam jawa. 1 tbsp java tamamarid water.
1sdm kecap manis nira. 1 tbsp palm sugar dark soy sauce. (bakoel Rempah)
2 sdm minyak utk menumis. 2 tbsp oil for saute.

Cara/method:
1. Panaskan minyak. Masukkan daun jeruk, lengkuas dan jahe. Tunis hingga harum. Heat oil. Add lime leaves, galangal and ginger. Saute until fragrant.
2. Masukkan bawang merah dan putih, tumis hingga harum, masukkan kacang panjang dan air sedikit2. Masak hingga air menyusut. Add shallot and garlic, saute until fragrant, add longbean and water step by step. Saute until the water reduce.
3. Masukkan sisa bahan, air asam jawa, kecap manis, lada dan garam. Aduk rata. Add remaining ingredients, tammarind water, dark soy sauce, pepper and salt. Stir well.
4. Sajikan dgn nasi panas dan lainnya. Serve with warn rice and others.
