Sate Sapi Bumbu Rujak – Beef Satay Rujak Spices

SATE DAGING BUMBU RUJAK – BEEF SATAY RUJAK SPICES

Bahan/ingredients:
500 gr daging sapi kisi/sengkel, iris setebal 3 ml. 500 gr beef chunks, slice 3 ml.
½ sdt nanas parut. ½ tsp grated pineapple.
1 sdm tepung sagu. 1 tbsp cornstarch

Bumbu perendam sate/satay marinate:
2 sdm cabe merah halus. 2 tbsp ground red chili
½ sdm air asam jawa. ½ tbsp java tammarind water
4 siung bawang putih. 4 cloves garlic.
8 butir bawang merah. 8 pcs shallot.
4 lbr daun jeruk, iris halus. 4 pcs line leave, finely slice,
1 sdt garam. 1 tsp salt.
1 sdt ketumbar bubuk. 1 tsp coriander.
1 pcs sere, iris halus. 1 pcs lemongras, finely slice. 1 cm jahe.
4pcs kemiri. 4 pcs candle nut
2 sdt gula merah. 2 tsp brown sugar.
2 sdm minyak sayur utk menumis. 2 tbsp veggie oil for saute.
2 sdm santan kental. 2 tbsp coconut milk. (kara)

Bumbu kacang/peanut sauce:
350 ml air panas. 350 ml hot water.
150 gr kacang tanah goreng. 150 gr fried peanut.
Kecap manis secukupnya. Some dark sweet soy sauce.
Garam dan lada bubuk secukupnya. Some salt and pepper.
Minyak sayur secukupnya utk menumis. Some veggie oil for saute.
6 butir bawang merah. 6 pcs shallot.
3 siung bawang putih. 3 cloves garlic.
4 buah cabe merah besar, iris. 4 pcs red chili.
2 butir kemiri 2 pcs candle nut.

Pelengkap/condiment:
Bawang merah secukupnya, slice. Some shallot, iris.
Cabe rawit secukupnya, iris. Some red chili padi, slice.
Lontong atau nasi. Rice cake or rice.
Serundeng. Roasted grated coconut.
Jeruk nipis/limau utk saus kacang. Lime for peanut sauce.

Cara/method:
1. Lumuri daging dgn dgn parutan nanas dan tepung sagu. Marinate beef with ground pineapple and cornstrach.
2. Haluskan semua bumbu perendam dan tumis hingga matang. Diamkan suhu ruang. Ground all marinate afn saute until cooked. Lets room temperature.

3. Campur bumbu perendam dgn daging. Tusuk dgn tusuk sate dan diamkan di lemari es selama 1 jam. Mix marinate with beef. Skewer beef and refrigerate for 1 hour.

4. Membuat saus kacang. How to make peanut sauce:
Goreng ½ matang bawang merah, bawang putih dan cabe kemudian blender hingga halus dgn bahan lain, lalu tumis hingga matang benar, (kecuali kecap manis). Sisihkan. ½ cooked shallot, garlic and chili, and than blender until smooth, saute until cooked. (Except dark sweet sauce)Set aside.
5. Panggang sate hingga matang. Grilled satay until cooked.

6. Campur saus kacang secukupnya dgn kecap manis dan air jeruk nipis. Mix some peanut sauce with dark sweet soy sauce and lime juice
7. Sajikan bersama pelengkap seperti pada foto. Serve with condiment like on picture.

NOTE:
1. Nanas parut tdk boleh melebihi takaran krn akan merusak texture dahing sapi. Don’t use ground pineaple over the mixture because it will damage the texture of meat /crush the meat.
2. Tanpa bumbu kacangpun daging sate ini adh enak sekali. Without peanut sauce this satay verry delicious.
