Nasi Kerabu – Kerabu Rice

Nasi Kerabu berasal dr Melayu/Malay. Sejenis nasi gurih di Indonesia, warna biru di dapat dr bunga telang yg direndam air panas. Nasi Kerabu comes from Melayu / Malay. A kind of savory rice in Indonesia, such as uduk rice or yellow rice, the blue color in the water can be drenched by hot water.

NASI KERABU – KERABU RICE

Bahan nasi kerabu/kerabu rice ingredients:
200 gr beras, cuci dan tiriskan. 200 gr rice, wash and strain.
320 ml air mendidih. 320 ml boiling water.
1 btg serai, keprak. 1 stalk lemongrass, crush.
2 sdm santan kental. 2 tbsp coconut cream. (Kara)
30 kuntum bunga telang (segar/kering). 30 buds butterfly pea flower (fresh/dried).

Bumbu halus/ground seasoning:
4buah bawang merah. 4 pcs shallot.
2 siung bawang putih. 2 cloves of garlic.
¼ sdt ketumbar bubuk. ¼ tsp coriander powder.
2 buah kemiri. 2 pcs candle nut.
½ sdt garam. ½ tsp salt.

Cara/method:
1. Rendam bunga Telang dgn air mendidih sampai air suhu ruang (sekitar 30 menit), saring dan buang bunga telang. Soak butterfly pea flower with boiling water until room temperature (around 30 minutes), strain and throw away the flowers.

2. Goreng ½ matang bawang merah dan bawang putih kemudian haluskan bersama kemiri dan bahan lainnya. Half fried shallot and garlic and than ground with candle nut and other seasoning.
3. Masukkan bumbu halus ke dalam air bunga telang aduk rata, tambahkan santan kental, aduk. Add ground seasoning into butterfly pea flower water, stir well, add coconut cream, stir.
4. Masukkan beras dan campur dgn air bunga dan serai ke penanak nasi, proses. Add rice and combine with flower water and lemongrass into rice cooker, process.
5. Sajikan nasi kerabu bersama lauk pilihan anda. Serve kerabu rice with condiment of your choice.
