Bebek Goreng Sambal Kedondong – Fried Duck Sambal Ambarella

Trimakasih buat adikku cantik Vhee Martha yg sdh mau berbagi resep bebek goreng ala Tembakan Surabaya…..bumbunya sungguh luar biasaaaaaa. Thank you for my pretty sister Vhee Martha who willingly shared her recipe of Tembakan Surabaya’s Fried Duck….the spices are amazing

BEBEK GORENG SAMBAL KEDONDONG – FRIED DUCK SAMBAL AMBARELLA

Bahan/ingredients:
1 ekor bebek cuci dan potong 8 bagian. Lumuri air jeruk nipis dan diamkan 30 menit. 1 duck, wash and cut 8 part. Marinate with lime and let’s stand for 30 minutes.
1 btg sereh keprak. 1 stalk lemongrass, crush.
2 cm lengkuas, keprak. 3 cm galangal, crush.
4 lbr daun jeruk. 4 pcs lime leaf.

Bumbu/seasoning:
12 buah bawang merah. 12 pcs shallot.
8 siung bawang putih. 8 cloves garlic.
2 btg serai, iris halus. 2 stalks lemongrass, finely slice.
4 lbr daun jeruk. 4 pcs lime leaf.
8 pcs kemiri. 8 pcs candlenut
½ sdm ketumbar. ½ tbsp coriander.
1 sdt merica. 1 tsp pepper
3 cm kunyit. 3 cm turmeric.
3 cm lengkuas. 3 cm galangal.
2 cm jahe. 2 cm ginger.
½ sdm gula merah. ½ tbsp brown sugar.

Sambal Kedondong/Sambal Ambarella:
1 buah kedondong, kupas dan parut kasar. 1 pcs ambarella, peel and roughly grated.
5 buah cabe rawit merah(sesuai selera). 5 pcs red cayenne.(as your desire)
3 buah bawang merah. 3 pcs shallot.
1 siung bawang putih. 1 clove garlic.
Garam secukupnya. Some salt.
1 sdt gula merah. 1 tap brown sugar.
½ sdt terasi bakar. ½ tsp roasted belacan.
1 sdm minyak panas. 1 tbsp hot oil.

Pelengkap/condiment:
Bumbu sangrai. Roasted spices.
Kemangi. Indonesia Basil.
Pete. Sticky bean.
Timun. Cucumber.
Nasi. Rice.
Kuah sisa rebusan. Remaining broth.

Cara/method:
1. Haluskan bumbu dan lumuri bebek inapkan semalam di kulkas. Ground the seasoning and marinade the duck, refrigerate for a nite.
2. Rebus bebek dgn sereh, lengkuas dan daun jeruk hingga bebek empuk dan air menyusut dgn api kecil. Boiling the duck with lemongrass, galangal and lime leaf until the duck tender and reduce the water.
3. Angkat bebek dan saring bumbunya, kemudian sangrai hingga bumbu kering. Lift up the duck and strain the seasoning, and then roasted the seasoning until dried.
4. Haluskan cabe rawit, bawang merah dan bawang putih, tambahkan gula merah, garam dan terasi, siram minyak panas, aduk, masukkan kedondong dan aduk rata. Ground cayenne, shallot and garlic, add brown sugar, salt ans belacan, pour hot oil, stir, add ambarella and stir well.
5. Panaskan minyak dan goreng bebek, sajikan bebek goreng dgn nasi yg disiram kaldu bebek dan pelengkap. Heat oil and frying the duck. Serving the duck with duck broth over the rice and condiment.

Note:
Aku tidak menggoreng bebek nya, tetapi aku memproses nya dgn AIR FRYER dgn suhu180C selama 15 menit. I didn’t fry the duck, but I processed with AIR FRYER with temperature 180C for 15 minutes.
