Soto Ayam Ambengan


SOTO AYAM AMBENGAN

Bahan/ingredients:
1 ekor ayam kampung ukuran besar, potong 4 bagian. 1 chicken big size, cut on 4
2 btg daun bawang, slice. 2 stalk green onion, slice.
2 btg sereh. 2 stalks lemongrass.
10 lbr daun jeruk. 10 pcs lime leaves
3000 ml air. 3000 ml water
3 sdm minyak utk menumis bumbu. 3 tbsp oil for saute herbs

Pelengkap/complimentary:
Sambal. (cabe rawit merah rebus dihaluskan dgn garam secukupnya). Sambal (boiled red cayenne ground with some salt).
Jeruk nipis. Lime
5 telor rebus, iris belah 2. 5 boiling eggs, cut into 2.
Kecap manis (pilihan). Dark soy sauce (optional)
1 buah kentang rebus, iris. 1 pcs boiled potato, slice.
Daun seledri, iris. Celery leaves, slice.
Daun bawang kecil, iris. Scallion, slice.
1 bgks soun, rendam air dan tiriskan 1 pack glass noodle, soak on water and strain.
100 gr toge, seduh air panas dan tiriskan. 100 gr beansprout, pour with hot water, strain.
Koya Kelapa(250 gr kelapa parut, sangrai dan 50 gr bawang putih goreng, dihaluskan). Koya Coconut (250 gr roasted grated coconut and 50 gr fried garlic, ground).
Krupuk pilihan. Your choice crackers.

Bumbu halus/ground spices:
12 bwg merah. 12 shallot
10 bwg putih. 10 cloves garlic
4 cm lengkuas. 4 cm galangal
2 cm jahe. 2 cm ginger
2 cm kencur. 2 cm fragrant ginger
4 cm kunyit. 4 cm turmeric
250 gr udang kecil, goreng kering. 250 gr shrimp small size, fried crispy.
1 sdm ketumbar bubuk. 1 tbsp coriander powder.
½ sdt jintan. ½ tsp cumin.
5 kemiri. 5 candlenut.
Garam secukupnya. Some salt .
1 sdt lada bubuk. 1 tsp pepper.

Cara/methods:
1. Didihkan air, masukkan ayam, daun jeruk dan sereh. Boil water, add chicken, lime leaves and lemongrass
2. Goreng bawang merah, bawang putih, jahe, lengkuas, kencur dan kunyit ½ matang. Haluskan bersama bahan bumbu yg lain, lalu tumis hingga harum dan matang, masukkan ke dlm kuah ayam.
Fried shallot, garlic, ginger, galangal, fragrant ginger and turmeric medium well. Ground with other ingredients of ground spices. Stir Fry until fragrant and well cook, add into chicken soup.
3. Masak hingga ayam empuk, angkat dan iris tipis. Masukkan bawang daun ke dlm sup. Cook until chicken tender. Lift up and thinly slice, add green onion into the soup.
4. Sajikan bersama pelengkap. Serve with complimentary.

Note:
Perbedaan Soto Ayam Lamongan dan Soto Ayam Ambengan adalah pada KOYA. Soto Ayam Ambengan menggunakan campuran kelapa sangrai dan bawang putih goreng, disebut Koya Kelapa. Soto Ayam Lamongan menggunakan campuran kerupuk udang dan bawang putih goreng, disebut Koya krupuk. The difference is Soto Ayam Lamongan and Soto Ayam Ambengan is at the KOYA. Soto Ayam Ambengan uses a mixture of roasted coconut and fried garlic, called Koya Kelapa. Soto Ayam Lamongan uses a mixture of prawn crackers and fried garlic, called Koya krupuk.
