Bakso Ayam & Bakso Ayam Jamur- Chicken Ball & Chicken Mushroom Ball

BAKSO AYAM &BAKSO AYAM JAMUR – CHICKEN BALL &CHICKEN MUSHROOM BALL

Bahan/ingredients:
500 gr daging ayam giling 50% beku. 500 gr ground chicken 50% frozzen.
125 gr tepung bakso. 125 gr meatball flour. (Nilasari).

90 ml air es.90 ml cold water.
30 ml putih telur dingin. 30 ml cold white egg.
5 gr jamur hitam kering, rendam air panas dan cincang halus. 5 gr dried black mushroom, soak on hot water and finely chop.

Bahan untuk sup/soup ingredients:
1800 ml air sisa rebusan baso. 1800 ml remaining meatball boiling water.
700 ml air. 700 ml water.
1 buah tulang sumsum. 1 pcs bone marrow.
4 siung bawang putih, keprak. 4 cloves of garlic, crush.
2½ sdt garam. 2½ tsp salt.
½ sdt lada bubuk. ½ sdt pepper powder.

Pelengkap/condiments:
Bawang daun secukupnya. Some scallion.
Bawang merah goreng secukupnya. Some fried shallot.
Sambal cabe rawit merah dan bawang putih kukus. Sambal steam cayenne and garlic.
Kecap manis sesuai selera. Sweet dark soy sauce as your desire.
Jeruk nipis sesuai selera. Lime as your desire
Mie rebus/bihun rebus/soun rebus. Boiled noodle/vermicelli/glass noodle

Cara/method:
1. Campur semua bahan dan proses dengan food prosesor. Kecuali jamur. Mix all the ingredients and process with food processor except mushrooms.

2. Ambil setengah bagian dari adonan baso dan campur dgn jamur cincang. Take half of the mixture and mix with chopped mushroom.

3. Simpan di frezer selama 30 menit dgn kondisi wadah tertutup. Freeze in an enclosed box for 30 minutes.

4. Siapkan air hangat, masukkan bakso yg sudah di bentuk bulat. Setelah panci penuh dengan bakso, nyalakan kompor dengan api kecil dan biarkan air mendidih (tidak sampai bergolak) dan bakso mengapung. Angkat baso dan tiriskan.
Prepare warm water and put in the shaped meatball. After the pot is full with the meatballs, turn on the stove on low heat and simmer until the meatballs float. Remove meatballs and drain.

5. Rendam baso dalam air es hingga baso dingin dan tiriskan. Submerge in cold water until meatballs are cold and drain again
6. Tes kematangan baso dgn cara membelah salah 1 baso bila spt foto berarti sdh matang sempurna. Take a meatball and slice in half to test if it is perfectly cooked (look at picture).

7. Saring air rebusan dan tambahkan bawang putih geprek, lada dan garam sebagai kuah bakso. Strain the cooking water of meatballs and add garlic geprek, pepper and salt as gravy meatball.

Note:
1. Dgn menggunakan tepung bakso dan cara diatas dijamin bakso kenyal dan anti gagal. By using the meatballs flour and the above method is guaranteed chewy meatballs and anti-fail
2. Resep ini menghasilkan 40 butir bakso ayam. This recipe is enough 40 pcs of chicken ball.
3. Daging ayam bisa diganti dgn daging babi or daging sapi. Chicken can be changing with pork or beef.
