Balapis Manado – Manadonese Layer Cake


BALAPIS MANADO – MANADONESE LAYER CAKE

Bahan/ingredients:
120 gr tepung rendah protein. 120 gr low protein flour. (Kunci Biru)
30 gr tepung beras. 30 gr tepung beras. (Rose brand).
15 gr tepung tapioka/kanji. 15 gr tepung tapioka/cornstarch.
750 ml santan dari 1 butir kelapa atau 200 ml santan KARA + 550 ml air. 750 ml coconut milk from 1 pcs coconut or 200 ml Coconut cream KARA + 550 ml water.
½ sdt garam. ½ tsp salt.
140gr gula pasir. 140 ml granulated sugar
15 gr coklat bubuk + 35 ml air. 15 gr cocoa powder + 35 ml water. Hershey’s
50 ml air pandan (20 lbr pandan suji + 2 lbr pandan wangi + 80 ml air). 100 ml pandan water (20 pcs Pandan Suji + 2 pcs fragrant pandan leave + 80 ml water)

Cara/method:
1. Campur gula pasir, tepung, dan garam, aduk rata. Combine granulated sugar, flour and salt.
2. Tambahkan santan sedikit demi sedikit sambil diaduk dan saring. Add coconut milk gradually while stirring and drain. 3. Bagi adonan jadi 2 bagian. Satu bagian dicampur dengan pasta coklat, aduk rata. Sisanya campur dengan air pandan. Divide the batter into 2 parts. One part is mixed with choco paste, mix well. The rest mix with pandan water.
4. Siapkan loyang ukuran 15x15x5 cm, olesi minyak. Prepare the pan 15x15x5 cm, smear with oil.
5. Panaskan kukusan, taruh loyang di atasnya, tuang 120 ml adonan hijau. Tutup dandang. Kukus selama 10 menit. Buka tutup kukusan, tuang 120 ml adonan coklat, lakukan terus bergantian sampai adonan Balapis habis. Terakhir, kukus selama 40 menit sampai Balapis matang. Preheat steamer, add the pan and pour 120 ml pandan batter, cover the steamer for 10 minutes. Open the lid of the steamer, pour 120 ml of chocolate dough, do keep changing until the batter is finished. Finally, steam for 30 minutes until the Balapis is cooked.
6. Diamkan hingga suhu ruang, kemudian dikeluarkan dr loyang dan potong sesuai selera. Let stand up to room temperature, then removed from the pan and cut to taste.

Note:
Tutup pengukus harus di bungkus dgn kain serbet, supaya adonan tidak kena tetesan uap air. Close the steamer should be wrapped in cloth napkin, so that the dough is not subject to droplets of water vapor.
