Rendang Daging Wagyu – Wagyu Beef Rendang

RENDANG DAGING WAGYU – WAGYU BEEF
RENDANG

Bahan/ingredients:
1000 gr daging wagyu lulur luar, potong sesuai selera. 1000 gr wagyu beef silver side, cut as desire.
400 gr kentang rendang, cuci. 400 gr rendang potatoes, wash.
1000 ml santan kental dr 4 buah kelapa tua. 1000 ml coconut milk from 4 pcs ripe coconut.
4 batang sereh. 4 stalks lemongrass.
4 biji asam kandis. 4 pcs Garcinia xanthochymus.

4 buah pekak. 4 star anis.
5 lembar daun jeruk. 5 pcs lime leaves.
4 lembar daun salam. 4 pcs bay leaf
2 lembar daun kunyit, potong 4cm dan sobek. 2 pcs turmeric leaves, cut on 4 cm and pull away.
300 gr kelapa parut sangrai. 300 gr roasted grated coconut.

Bumbu halus/ground seasoning:
30 buah bawang merah. 30 pcs shallot.
15 siung bawang putih. 15 cloves garlic.
100 gr cabe merah (kriting lbh enak). 100 gr red chili (curly chili better)
3 cm Jahe. 3 cm ginger.
5 cm lengkuas. 5 cm galangal.
1 sendok teh merica bubuk. 1 tsp pepper powder.
2 sdm gula merah. 2 tbsp brown sugar
Garam secukupnya (masuk bila daging sdh empuk 75%). Some salt (add the last time when the beef tender 75%)
6 sdm minyak sayur utk menumis. 6 tbsp veggie oil for stir fry

Cara/method:
1. Goreng ½ matang dan haluskan bawang merah, bawang putih, cabe, jahe, asam kandis dan lengkuas. Half fried and ground shallot, garlic, chili, ginger and galangal.
2. Panaskan minyak. Tumis bumbu halus dan bumbu lainnya hingga harum, masukkan daging sapi, aduk hingga daging berubah warna, masukkan kentang dan masak hingga bumbu mulai kering. Heat oil. Saute ground spices and other spices until fragrant, add beef, stir well until beef changing color, add potato and cook reduce water of spices.
3. Masukkan santan kental, masak hingga mulai tampak berminyak, lanjutkan masak dgn api kecil dan sesekali diaduk spy tdk gosong. Add heavy coconut cream, stir until oily, continue simmer and occasionally stir to prevent from burning.
4. Masukkan kelapa sangrai. Aduk terus dan masak dgn api kecil. (masak memakan waktu minimal 4-5 jam). Add roasted coconut. Stir and simmer. (cooking rendang need minimal 4-5 hour).

Note:
1. Santan segar bisa diganti 2 bungkus kental instan + 100 ml air. Fresh coconut milk can be change with 2 pack coconut milk instant + 100 ml water. KARA
2. Cara ku, setelah mendidih aku pindahkan ke slowcooker. Masak hingga empuk dan air menyusut. Dan sesekali diaduk (Sekitar 4-5 jam)My way, after boiling I move to slow cooker. Cook until tender and reduce the water. And stirring occasionally (Around 4-5 hours)
3. Utk daging wagyu cukup dimasak 2 diproses 2 jam saja dgn slow cooker. For wagyu beef process just 2 hour using slow cooker.
