Beef Steak With Miso Glace


BEEF STEAK WITH MISO GLACE

Bahan/ingredients:
300 gr daging sapi has. 300 gr tenderloin.
Bawang bombay secukupnya, iris. Some onion, slice.
10 gr mentega tawar. 10 gr unsalted butter. (elle & Vire)

Bumbu perendam/marinate:
1 sdm miso coklat. 1 tbsp brown miso.
1 sdm sake (bisa diganti Mirin). 1 tbsp sake (can be changes with Mirin)
Lada hitam kasar secukupnya. Some ground black pepper.
3 siung bawang putih, haluskan. 3 clove of garlic, ground.
2 sdt gula palem. 2 tsp palm sugar.

Cara/method:
1. Campur semua bahan bumbu perendam dan lumuri daging dan diinapkan semalam dalam lemari es dengan wadah tertutup. Mix all the marinade ingredients and coat the meat and put it overnight in the refrigerator with the container closed.
2. Panaskan mentega, letakkan daging dan balikkan daging hingga kedua sisinya berwarna kecoklatan (medium well). Heat butter, place the meat and turn the meat until the two sides are browned.(medium well)
3. Angkat daging, biarkan sisa bumbu perendam dan tambahkan bawang bombay masak hingga layu. Remove the meat, leave the remaining marinade and add cooked onions until wilted.

4. Iris tipis daging dan letakkan di atas piring saji, siram saus diatasnya dan taburi biji wijen sangrai, sajikan bersama salad dengan saus wijen. Thinly slice the meat and place it on a serving plate, pour the sauce on top and sprinkle roasted sesame seeds, serve with a salad with sesame sauce.
