Bolu Jadoel Pandan Kaya – Pandan Kaya Classic Cake


BOLU JADOEL PANDAN KAYA – PANDAN KAYA CLASSIC CAKE

Bahan/ingredients:
9 butir kuning telur. 9 pcs egg yolk.
7 butir putih telur. 7 pcs white egg.
170 gr tepung rendah protein. 170 gr low protein flour. (kunci Biru)
30 gr fiber cream.
½ sdt garam. ½ tsp salt.
160 gr gula pasir. 160 gr granulated sugar.
200 gr mentega leleh. 200 gr melted butter. (Anchor)
50 ml sari pandan kental. 50 ml thick pandan juice.
Selai kaya secukupnya. Some Kaya Jam. (By Veronica Santoso 085100064064)

Cara/method:
1. Panaskan oven 170 C (sesuaikan dengan oven anda). Oles loyang persegi 22x22x8cm dengan mentega dan beri alas kertas roti. Sisihkan. Preheat oven 170 C (adjust to your oven). Brush the square pan 22x22x8cm with butter and cover with the baking sheet paper. Set aside.
2. Campur tepung, fiber cream dan garam. Sisihkan. Combine flour, fiber cream and salt. Set aside.
3. Kocok putih telur dengan kecepatan tinggi hingga berjejak, sisihkan. Beaten white egg with high speed until soft peak, set aside.
4. Kocok kuning telur dan gula dengan kecepatan sedang hingga mengembang. Beat the egg yolks and sugar at medium speed until it expands.
5. Turunkan kecepatan mixer plg rendah, masukkan bahan kering bertahap dan sari pandan. Masukkan mentega sambil diaduk perlahan. Set mixer to low speed , add the gradual dry ingredients and pandan juice. Add butter while stirring slowly.
6. Masukkan putih telur kocok dalam 3 tahap dan aduk perlahan dengan spatula. Add 3 times beaten white egg and gently stirring with spatula.
7. Tuang adonan kedalam loyang dan panggang selama 30 menit atau hingga permukaan cake kecoklatan, (lakukan tes tusuk dan pastikan tidak ada adonan yg menempel pada tusuk sate). Pour the mixture into a baking sheet and bake for 30 minutes or until the surface of the cake is browned (do a prick test and make sure there is no dough attached to the skewer).
8. Keluarkan cake dari oven dan letakkan cake diatas rak kue. Biarkan hingga suhu ruang dan dan belah 2 bagian, oles dengan selai kaya dan susun di atasnya potongan kue yg lain, potong kue sebelum dihidangkan. Remove the cake from the oven and place the cake on the cake rack. Leave it to room temperature and and split 2 parts, top with rich jam and arrange on top of another piece of cake, cut the cake before serving.

Note:
Cake ini bertexture padat tapi moist, karna berjenis bolu jadul. This cake has a solid texture but moist, because it’s a type of old version sponge.
