Chicken & Radish Soup

SUP AYAM & LOBAK – CHICKEN & RADISH SOUP

Bahan/ingredients:
1 ekor ayam kampung ukuran kecil, potong 8. 1 pcs farmer chicken small size, cut on 8.
2 buah lobak putih ukuran kecil, kupas dan potong. 2 pcs white radish, peel and cut.
5 pcs kapulaga. 5 pcs of cardamom.
4 buah adas. 4 pcs of fennel.
3 batang seledri, ikat. 3 stalks of celery, tide.
1 sdm arak masak. (Boleh di skip) 1 tbsp wine cooking. (Xiao xing wine can be skip)
1500 ml air mineral panas. 1500 ml hot mineral water.

Bumbu halus/ground seasoning:
5 siung bawang putih. 5 cloves of garlic.
2 buah bawang merah. 2 pcs of shallot.
½ buah pala ukuran kecil. ½ pcs of nutmeg small size.
¼ sdt lada bubuk. ¼ tsp pepper powder.
1 sdt garam (sesuai selera). 1 tsp salt (to taste)

Cara/method:
1. Masukkan kapulaga dan adas dalam kantung bumbu. Insert cardamom and fennel inti spice bag.
2. Tumis bumbu halus hingga harum, masukkan ayam dan tumis hingga berubah warna. Masukkan arak dan aduk. Saute the ground spices until fragrant, add the chicken and saute until it changes color. Add the wine and stir.
3. Masukkan kantong bumbu, lobak dan air panas. Masak dengan api kecil hingga ayam empuk sekitar 20 menit. Matikan api dan tutup rapat panci. Enter the seasoning bag, radish and hot water. Simmer until the chicken is tender about 20 minutes. Turn off the heat and close the pan tightly.
