Iga Babi Dengan Sawi Asin & Tahu – Pork Ribs With Salted Mustard & Tofu


IGA BABI DENGAN SAWI ASIN & TAHU – PORK RIBS WITH SALTED MUSTARD & TOFU

Bahan/ingredients:
500 gr iga babi, cuci. 500 gr pork ribs, wash.
2 ikat sawi asin, potong. 2 bunches of salted mustard, slice.
1 kotak tahu jepang, potong. 1 pack of japanese tofu, cut.
4 siung bawang putih, cincang. 4 cloves of garlic, chop.
3 iris jahe. 3 slices ginger,
40 ml air sawi asin. 40 ml of salted mustard water,
1500 ml air panas. 1500 ml hot water.
2 sdm arak masak. 2 tbsp wine cooking. (xao xing)
1 sdt garam (sesuaikan). 1 tsp salt (adjustable)
⅓ sdt lada. ⅓ tsp pepper.
2 sdt minyak wijen + 1 sdm minyak olive untuk menumis. 2 tsp sesame oil + 1 tbsp olive oil for sauté.

Pelengkap/condiment:
Sambal cabe rawit dan kecap asin. Sambal cayenne pepper and soy sauce.

Cara/method:
1. Panaskan minyak dan tumis jahe bersama bawang putih hingga harum. Heat oil and saute ginger and garlic until fragrant.
2. Masukkan iga babi, tumis hingga berubah warna, masukkan arak masak aduk rata, tuang air panas. Masak dengan api kecil hingga iga empuk (sekitar 15 menit). Add the pork ribs, stir-fry until they change color, add the cooking wine and mix well, pour hot water. Simmer until the ribs are tender (around 15 minutes).
3. Masukkan sawi asin dan 30 ml air sawi asin, garam dan lada, taste rasa, masukkan tahu, masak 5 menit. Add salted mustard and salted mustard water, salt and pepper, taste, add tofu, cook for 5 minutes.
4. Hidangkan panas dengan pelengkap dan nasi. Serve hot with condiment and rice.
