Bebek Panggang Oriental – Oriental Roasted Duck


BEBEK PANGGANG ORIENTAL – ORIENTAL ROASTED DUCK

Bahan/ingredients:
1 ekor bebek, cuci dan cabut bulunya . 1 pcs duck, wash and pull duck feathers.

½ sdt kayu manis bubuk. ½ tsp cinnamon powder.
1 sdt jahe bubuk. 1 tsp ginger powder.
½ buah pala. ½ pcs nutmeg.
½ sdt lada bubuk. ½ tsp pepper powder.
3 cengkeh, haluskan. 3 pcs of cloves, ground.
1 sdt ngohiong bubuk. 1 tsp five spice.
3 sdm kecap asin. 3 tbsp soy sauce.
1 sdt madu. 1 tsp honey. (Tropicana)

Cara/method:
1. Campur bahan bumbu kering dan balurkan ke bebek yg sdh dikeringkan dengan tisu dapur. Kemudian campur madu dan kecap asin balurkan ke bebek. Mix the ingredients of dry seasoning and spread it to the duck that has been dried with kitchen paper. Then mix the honey and soy sauce into the duck.

2. Letakkan bebek dalam wadah dan tutup dengan plastik dan didiamkan di lemari es selama semalam. Place the duck in a container and cover it with plastic and leave it in the refrigerator for one night.

3. Rebus bebek selama 1 jam dgn api kecil, tiriskan. Boiling the duck for 1 hour and drain.
4. Panaskan oven 180C. Letakkan sisi dada bebek di atas wajan panggang dan tusukkan kulit menggunakan garpu. Preheat the oven to 180C. Place duck breast side up in a roasting pan and prick skin all over using a fork.
5. Panggang selama 30 menit dalam oven yang sudah dipanaskan. Sementara bebek dipanggang, campur 2 sdm kecap dan madu. Setelah 30 menit, sapukan campuran madu ke bebek dan kembalikan ke oven. Putar panas hingga 200 C. Panggang selama 10-15menit, atau sampai kulitnya sangat kecoklatan. Jangan biarkan kulit menjadi hangus. Roast for 30 minutes in the preheated oven. While the duck is roasting, mix together the remaining 2 tbsp of soy sauce and honey. After 30 minutes, brush the honey mixture onto the duck and return it to the oven. Turn the heat up to 200 C. Roast for 10-15 minutes, or until the skin is richly browned. Do not allow the skin to char.

6. Biarkan bebek suhu ruang baru kemudian dipotong untuk disajikan langsung dengan golden sauce atau untuk sajian masakan lain. Let the duck room temperature and then cut it to be served directly with golden sauce or for serving other dishes.
