Bakwan Jagung Krispi ala Manado – Manadonese Crispy Corn Pancake


BAKWAN JAGUNG KRISPI ALA MANADO –
MANADONESE CRISPY CORN PANCAKE

Bahan/ingredients:
500 gr jagung manis pipilan. 500 gr shelled sweet corn.
100 gr tepung beras. 100 gr rice flour.
50 gr tepung tapioka. 50 gr tapioca flour.
2 butir telur. 2 pcs egg.
1 batang daun bawang besar, iris halus. 1 stalks of spring onion, finely slice.
20 ml air kapur sirih. 20 ml lime paste water.
80 ml air dingin. 80 ml cold water.

Bumbu halus/ground seasoning:
5 siung bawang putih. 5 cloves of garlic.
3 buah bawang merah. 3 pcs of shallot.
2 buah kemiri. 2 pcs of candlenut.
1 sdt ketumbar bubuk. 1 tsp coriander.
¼ sdt lada bubuk. ¼ tsp pepper powder.
1 sdt garam. 1 tsp salt.

Cara/method:
1. Panaskan minyak. Heat oil.
2. Campur semua bahan dan bumbu, aduk hingga rata. Combine all ingredients and seasoning, stir well.

3. Masukkan ring (untuk memotong kue) ke dalam minyak panas, letakkan 1 sdm adonan jagung ke dalam ring dan biarkan hingga ring bisa dilepas. Goreng hingga keemasan dan tiriskan. Insert the ring (to cut the cake) into hot oil, place 1 tbsp corn mixture in the ring and allow it to release. Fry until golden and drain.

Note:
Bila tidak mempunyai air kapur sirih boleh diganti dgn ½ sdt baking powder. If you don’t have lime paste water you can replace it with ½ tsp baking powder.
