Sambal Kecombrang Special – Special Sambal Torch Ginger


SAMBAL KECOMBRANG SPECIAL – SPECIAL SAMBAL TORCH GINGER

Bahan/ingredients:
1 buah bunga kecombrang, cincang halus. 1 pcs torch ginger, finely chop.
2 batang sereh, cincang halus bagian putihnya. 2 stalks lemongrass, finely chop the white part.
6 siung bawang putih, cincang halus. 6 cloves garlic, finely chop.
2 sdm cabe merah giling. 2 tbsp ground red chili.
2 sdt ebi sangrai, haluskan. 2 tsp dried shrimp, ground.
¼ sdt garam. ¼ tsp salt.
¼ sdt terasi bakar. ¼ tsp roasted shrimp paste.
3 sdm minyak sayur. 3 tbsp veggie oil.

Cara/method:
1. Panaskan minyak, masukkan kecombrang dan sereh dan goreng hingga kering 90%, masukkan bawang putih, goreng bersama hingga semua matang hingga matang, drain. Heat oil, add chopped torch ginger and lemongrass and frying until 90% cooked, add chopped garlic, frying until all cooked, tiriskan.
2. Tumis cabe giling hingga matang, tambahkan garam, aduk rata hingga cabe berwarna merah matang, masukkan bahan yg sdh digoreng, aduk sekitar 1 menit, sisihkan. Saute the chili until cooked, add salt, stir well until the red chili is ripe, add the ingredients that have been fried, stir for about 1 minute, set aside.
