Tahu Isi Bihun Telur Kornet – Stuffed Tofu With Vermicelli Egg Corned Beef


TAHU ISI BIHUN TELOR KORNET – STUFFED TOFU WITH VERMICELLI EGG CORNED BEEF

Bahan/ingredients:
20 buah tahu, goreng hingga kering dan keluarkan bagian dalamnya. 20 tofu, fried until crispy and remove the inside.
200 gr bihun jagung kering, rendam hingga lunak. 200 gr dried corn vermicelli, soak until soft.
200 gr tauge. 200 gr bean sprouts.
2 buah wortel ukuran sedang, kupas dan parut kasar. 2 medium-sized carrots, peeled and roughly grated.
30 gr seledri, iris. 30 gr celery, slice.
3 butir telur, kocok lepas. 3 pcs egg, beaten.
50 gr kornet. 50 gr corned beef.
5 buah bawang merah, iris halus. 5 pcs shallot, finely slice.
2 siung bawang putih, iris halus. 2 cloves of garlic, finely slice.
1 sdm saus tiram. 1 tbsp oyster sauce.
1 sdt lada. 1 tsp pepper.
1 sdm kecap ikan. 1 tbsp fish sauce.
Garam secukupnya. Some salt.
2 sdm minyak sayur untuk menumis. 2 tbsp veggie oil for saute.
200 ml air panas. 200 ml hot water.

Bahan pencelup/dipping ingredients:
100 gr tepung beras. 100 gr rice flour.
40 gr tepung tapioka. 40 gr tapioca flour.
½ sdt bawang putih bubuk. ½ tsp of garlic powder.
½ sdt garam. ½ tsp salt.
¼ sdt lada bubuk. ¼ tsp pepper powder.
100 ml air es. 100 ml cold water.

Saus kacang/peanut sauce:
40 gr kacang tanah sangrai. 40 gr roasted peanut.
1 buah cabe merah besar buang biji. 1 pcs red big chilli.
5 cabe rawit merah (sesuaikan). 5 pcs red bird eye (adjusted)
¼ sdt garam. ¼ tsp salt
1 sdt gula. 1 tsp sugar.
2 sdm air jeruk nipis. 2 tbsp lime juice.
1 sdm bawang putih goreng. 1 tbsp fried garlic.
150 ml air panas. 150 ml hot water.

Cara/method:
1. Campur telur dan kornet, buat orak arik. Sisihkan. Combine egg and corned beef, scramble. Set aside.
2. Panaskan minyak, masukkan bawang merah dan bawang putih, tumis hingga harum. Heat oil, add shallot and garlic, saute until fragrant.
3. Masukkan wortel tumis hingga lembut, masukkan tauge, bihun dan bumbu aduk hingga lembut sambil tambahkan air panas bertahap, masukkan telur orak arik dan seledri. Aduk hingga rata. Add stir-fried carrots until smooth, add bean sprouts, vermicelli and seasoning until smooth while adding gradual hot water, add scrambled eggs and celery. Mix well.

4. Masukkan bahan isian ke dalam tahu. Insert the filling into tofu.

5. Panaskan minyak dalam jumlah banyak untuk menggoreng tahu isi. Heat oil in large quantities to fry stuffed tofu.
6. Campur bahan pencelup. Combine dipping ingredients.
7. Celupkan tahu dalam larutan pencelup dan masukkan ke dalam minyak panas, goreng hingga keemasan, tiriskan. Dipping the stuffed tofu into dipping mixture and add into hot oil, frying until golden, strain.
8. Masukkan bahan saus kacang kedalam blender dan proses hingga halus kecuali jeruk nipis. Didihkan saus dan masukkan air jeruk nipis, aduk. Place peanut sauce ingredients into blender and process until smooth. Boiling the sauce and add lime juice, stir.
9. Sajikan tahu isi dengan bumbu kacang. Serve stuffed tofu with peanut sauce.
