Lodeh Salmon Premium – Premium Lodeh With Salmon


LODEH SALMON PREMIUM – PREMIUM LODEH WITH SALMON

Bahan/ingredients:
500 gr salmon, potong 4 bagian, 500 gr salmon, cut on 4.
200 ml santan. 200 ml coconut milk. (KARA)
1 batang sereh, geprek. 1 stalks of lemongrass, crush.
2 lembar daun salam. 2 pcs Indonesia bayleaf.
2 cm lengkuas, iris. 2 cm galangal, slice.
2 buah cabe merah, iris serong. 2 pcs red chili, oblique.
2 buah cabe hijau, iris serong. 2 pcs green chili, oblique.
2 buah cabe rawit merah ukuran besar, iris serong. 2 pcs red cayenne big size, oblique.
1 buah tahu putih besar, potong dadu. 1 pcs white tofu big size. Cut cube.
200 gr tempe, potong dadu. 200 gr tempeh, cut cube.
2 buah terong ungu ukuran sedang, potong. 2 pcs purple eggplant medium size, cut.
5 batang kacang panjang, potong 2 cm. 5 stalks of long bean, cut 2 cm.
5 buah tomat hijau, belah 2. 5 pcs green tomato, cut on 2.
2 buah wortel ukuran sedang, potong sesuai selera. 2 pcs carrot medium size, cut as your desire.
200 gr sayur nangka muda,potong dan rebus 20 menit, tiriskan. 200 gr young jackfruit, cut and boiling for 20 minutes, strain.
1 buah labu siam ukuran sedang, kupas dan potong. 1 pcs squash medium size, peel and cut.

Kaldu udang/shrimp broth:
250gr kulit dan kepala udang. 250 gr skin and head of shrimp.
1000 ml air mineral. 1000 ml mineral water.
2 cm jahe greprek. 2 cm crushed ginger.

Bumbu halus/ground spices:
8 buah bawang merah. 8 pcs shallot
5 siung bawang putih. 5 cloves garlic
½ sdm cabe merah giling. ½ sdm ground red chili.
5 butir kemiri. 5 pcs candle nut.
1 sdt trasi. 1 tsp shrimp paste.
2 sdt garam (sesuai selera). 2 tsp salt (to taste)
½ sdt gula. ½ tsp sugar.
1 sdt ketumbar bubuk. 1 tsp coriander powder.
1 sdm ebi sangrai halus. 1 tbsp ground roasted dried shrimp.
2 sdm minyak olive untuk menumis. 2 tbsp olive oil for saute.

Cara/method:
1. Rebus air dan jahe, bila sudah mendidih masukkan kulit udang. Gunakan api kecil masak selama 20 menit, saring dan buang udang serta jahe. Sisihkan. Boil water and ginger, when it boils, enter the shrimp shell. Use low heat cook for 20 minutes, strain and discard the shrimp skin and ginger. Set aside.
2. Goreng tahu dan tempe, tiriskan. Frying tofu and tempeh, strain.
3. Panaskan minyak, masukkan daun salam, sereh, lengkuas tumis hingga harum, masukkan bumbu halus, tumis hingga harum. Beri sedikit kaldu udang. Aduk rata.Heat oil, add bay leaves, lemongrass, galangal stir-fry until fragrant, add spices, stir-fry until fragrant. Give a little shrimp broth. Stir well.
4. Masukkan semua bahan kecuali santan, wortel, semua cabe dan tomat hijau. Kecilkan api, masak selama 20 menit. Add all ingredient except coconut, carrot, all chili and green tomato.
5. Campur santan dengan 100 ml air mineral. Sisihkan. Combine coconut milk with 100 ml mineral water. Set aside.
6. Masukkan sisa bahan dan santan, aduk rata. Matikan api. Add remaining ingredients and coconut milk, stir well. Turn off the stove.

7. Diatas teflon, beri 1 sdm minyak olive, letakkan salmon di atasnya dengan bagian kulit menempel pada teflon. Biarkan kulit garing, balik @1 menit tiap sisi daging salmon. Angkat salmon. On top of Teflon, give 1 tbsp of olive oil, place the salmon on it with the skin attached to the Teflon. Let the skin crisp, turning @ 1 minute on each side of salmon. Lift up salmon.

8. Lodeh siap disajikan panas bersama salmon diatasnya. Lodeh is ready to be served hot with salmon on top.
