Sayur Asam Sunda – Sundanese Sour Soup


SAYUR ASAM SUNDA – SUNDANESE SOUR SOUP

Bahan/ingredients:
1 buah jagung manis, potong. 1 pcs sweet corn, cut.
⅕ buah pepaya mentah, kupas kulit dan potong.. ¼ pcs raw papaha, peel the skin and cut
100 gr nangka muda, potong.. 100 gr young jackfruit, cut.
2 batang kacang panjang, potong 2 cm. 2 stalks of long bean, cut 2 cm.
50 gr melinjo. 50 gr gnetum gnemon.
40 gr daun melinjo. 40 gr gnetum gnemon leaves.
50 gr kacang tanah. 50 gr peanut.
2 lembar daun salam. 2 pcs of indonesia bayleaf.
1 sdm air asam jawa. 1 tbsp java tamarind water.
1 iris lengkuas. 1 slice of galangal.
750 ml air mineral. 750 ml mineral water.
4 buah asam. 4 pcs tamarind.

Bumbu halus/ground spice:
1 sdt terasi bakar. 1 tsp roasted belacan.
1½ sdm gula merah. 1½ tbsp brown sugar.
1 sdt garam. 1 tap salt.
6 buah bawang merah. 6 pcs shallot.
1 siung bawang putih. 1 cloves or garlic.
2 buah kemiri. 2 pcs candlenut.
½ sdm cabai merah giling. ½ tbsp ground chili.

Cara/method:
1. Didihkan air bersama lengkuas, daun salam dan asam. Angkat asam yang sdh empuk dan tekan dengan sendok makan, beri air, aduk dan masukkan ke dalam sup. Boil water with galangal, bay leaves and tamarind. Remove the soft tamarind and press with a tablespoon, add water, stir and put it in the soup.
2. Masukkan melinjo, jagung, pepaya muda dan kacang tanah, masak hingga empuk. Add gnetum gnemon, corn, raw papaya and peanut, cook until tender.
3. Masukkan bumbu halus (test rasa), daun melinjo dan kacang panjang, didihkan sebentar. Add ground seasoning (to taste), gnetum gnemon leaves and long bean, boiling a while.
4. Sayur Asam siap disajikan bersama lauk lainnya.. Sour Soup ready to serve with other side dish.
