Sup Iga & Otot Babi – Pork Ribs & Pork Tendon Soup


SUP IGA & OTOT BABI – PORK RIBS & PORK TENDON SOUP

Bahan/ingredients:
300 gr iga babi, 300 gr pork ribs.
6 buah otot babi goreng, potong. 6 pcs fried pork tendon, cut.
200 gr kacang merah segar. 200 gr fresh red bean.
800 ml air mineral panas. 800 ml hot mineral water.
3 siung bawang putih geprak. 3 cloves of crush garlic.
2 iris jahe. 2 slices of ginger.
1½ sdt garam (sesuai selera), 1½ tsp of salt (to taste.
½ sdt lada bubuk. ½ tsp of pepper powder.
3 lembar daun jeruk. 3 pcs of lime leaves.
1 sdm arak masak. 1 tbsp cooking wine. (Xao Xing Chiu)
1 sdm minyak olive + ½ sdm minyak wijen. 1 tbsp olive oil + ½ tbsp sesame oil.

Cara/method:
1. Panaskan minyak dalam panci Untuk sup, tumis jahe hingga harum dan kecoklatan, masukkan bawang putih, tumis hingga harum. Heat oil on a soup pan. saute ginger until fragrant and golden brown, add garlic, saute until fragrant.
2. Masukkan iga, tumis hingga berubah warna, masukkan arak dan aduk rata. Add pork ribs, saute until changing color, add cooking wine and stir well.
3. Masukkan semua bahan dan bumbu, aduk. Tuang air panas, masak hingga sup mendidih (buang buih dari iga), kecilkan api dan tutup panci, masak dengan api kecil selama 15 menit. Add all ingredients and seasoning. Pour hot water, boiling soup(remove foam from the surface), turn to low heat and cover the pan, simmer for 15 minutes.
4. Sajikan panas dengan sambal kecap asin dan cabai rawit. Serve hot with sambal soy sauce and cayenne.
