Bakpao Isi Babi Masak Kecap – Braised Pork in Pao


BAKPAO ISI MASAK KECAP – BRAISED PORK IN PAO

Bahan/ingredients:
1000 gr samcam. 1000 gr pork belly.
50 gr ebi, rendam dan cincang. 50 gr dried shrimp, soak and chop.
100 gr cumi kering/juhi, rendam dan cincang. 100 gr dried squid, soak and chop.
10 buah bunga lawang/pekak. 10 pcs star anise.
8 buah jamur shitake ukuran besar yg sdh di rendam hingga empuk. 8 large size shitake mushrooms that have been soaked until tender.
6 siung bawang putih, cincang. 6 cloves of garlic, chop.
1000 ml air mineral. 1000 ml mineral water.

Bumbu/seasoning:
2 sdm kecap cap jamur. 2 tbsp mushroom soy sauce.
2 sdm arak masak china. 2 tbsp chinese cooking wine. (Xao Xing).
2 sdm kecap asin. 2 tbsp soy sauce.
3 sdm kecap manis. 2 tbsp dark soy sauce.
Garam secukupnya. Some salt.
1 sdt lada hitam bubuk. 1 tbsp black pepper powder.
1 sdt ngohiong bubuk. 1 tsp five spices.

Cara/method:
1. Rebus bagian kulit babi dan tusuk bagian kulit babi, Boiling the pork skin for 10 minutes and poke the pork skin.
2. Beri sedikit minyak pada penggorengan, letakkan bagian kulit babi menempel pada penggorengan dan biarkan hingga kulit kering. Angkat dan potong sesuai selera. Put a little oil on the frying pan, place the pig skin on the frying pan and allow it to crispy. Remove and cut according to taste.

3. Goreng samcam yg sdh dipotong dgn sedikit minyak dalam panci sup, biarkan hingga kedua sisi kecoklatan. Fried samcam that has been cut with a little oil in a soup pan, leave it until both sides brown.

4. Masukkan bawang putih di dalam panci dan aduk hingga harum, masukkan arak masak aduk rata. Masukkan bumbu dan bahan yg lain. Biarkan mendidih dan masak dgn api kecil selama 30 menit atau smp babi empuk. Enter the garlic in the pan and stir until fragrant, put the cooking wine stir well. Add seasonings and other ingredients. Simmer for 30 minutes or until the pork tender.

5. Setelah matang, iris jamur sesuai selera dan siap dihidangkan sebagai isian bakpao atau utk topping nasi atau mie. After cooked, slice the mushrooms according to taste and are ready to be served as a filling for steamed buns or for topping rice or noodles.
