Udang Saus Inggris – Shrimp With Worcestershire Sauce


UDANG SAUS INGGRIS – SHRIMP WITH WORCESTERSHIRE SAUCE

Bahan/ingredients:
12 ekor udang ukuran sedang, belah punggung. 12 medium-sized shrimp, split the back.
1 buah jeruk nipis. 1 pcs of lime.
Garam dan lada secukupnya. Some salt and pepper.
6 buah bawang merah geprak, 6 pcs of crushed shallot.
5 siung bawang geprak. 5 pcs of crushed garlic.
10 batang daun bawang, 10 stalks of scallion.
3 buah cabai hijau besar, potong serong. 3 pcs green pepper, oblique.
30 gr mentega tawar. 30 gr unsalted butter. (Anchor)

Bumbu/seasoning:
2 sdm saus inggris. 2 tbsp worcestershire sauce. (Lea and Perrins)
1 sdm saus tiram. 1 tbsp oyster sauce.
1 sdm kecap asin. 1 tbsp soy sauce.
½ sdm tabasco. ½ tbsp tabasco.
½ sdm arak masak. ½ tbsp cooking wine. (Xao Xing).
½ sdm saus tomat. ½ tbsp tomato paste. (Del Monte)
½ sdm kecap manis. ½ tbsp dark soy sauce.
½ sdm madu. ½ tbsp honey. (Tropicana)
⅛ sdt lada hitam kasar. ⅛ tsp coarse black pepper.
50 ml air panas. 50 hot water.

Cara/method:
1. Bumbui udang dengan jeruk nipis, garam dan lada, diamkan selama 30 menit. Goreng kering. Season shrimp with lime, salt and pepper, let stand for 30 minutes. Dry fried.

2. Panaskan mentega, masukkan bawang merah dan bawang putih, tumis hingga harum. Heat butter, add shallot and garlic, saute until fragrant
3. Masukkan udang dan arak aduk hingga harum, masukkan bumbu, aduk rata. Add shrimp and wine stir until fragrant, add seasoning, stir well.
4. Masukkan cabai hijau, bawang daun dan air panas, aduk smp cairan menyusut. Add green pepper, scallion and hot water, stir until reduce the liquid.
5. Letakkan udang diatas piring saji. Place shrimp on dish.
