Chuka Iidako – Seasoned Baby Octopus


CHUKA IIDAKO – SEASONED BABY OCTOPUS

Bahan/ingredients:
1.000gr bayi gurita, cuci dan buang kantung tinta. 1.000 gr baby octopus, wash and discard ink bags.
12-15 tetes pewarna makanan merah. 12-15 drops food coloring red.

Bumbu/seasoning:
150 ml saus teriyaki. 150 ml teriyaki sauce. kikkoman
2 sdm gula merah. 2 tbsp brown sugar.
1 sdm cuka salad jepang. 1 tbsp japanese salad vinegar. (SHU)
½ sdm saus sriracha. ½ tbsp sriracha chili sauce.
3 siung bawang putih halus. 3 cloves ground garlic.
1 sdm tauco kedelai hitam. 1 tbsp black bean paste.
2 sdt jahe halus. 2 tsp ground ginger.
2 sdm minyak wijen. 2 tbsp sesame oil.
1 sdm biji wijen. 1 tbsp sesame seed.

Cara/method:
1. Campur bayi gurita dan bumbu simpan semalam di kulkas. Marinate baby octopus overnight in the refrigerator.
2. Angkat baby octopus dari bumbu perendam dan beri pewarna merah, diamkan 1 jam. Remove baby octopus from the marinade and add red coloring, let stand 1 hour.
3. Panaskan panci, tuang bumbu perendam dan biarkan mendidih, kecilkan api dan masukkan gurita dan aduk 2 menit, matikan api. Heat the pan, pour the marinade and simmer, reduce the heat and add the octopus and stir 2 minutes, turn off the heat.
4. Biarkan hingga suhu ruang dan simpan di kulkas. Sajikan saat dingin. Let it out until room temperature and refrigerate. Serve chilled.

Note:
Jangan masak gurita terlalu lama karena teksturnya akan menjadi keras. Don’t cook the octopus for too long or the texture will be rubbery.
