Balado Jengkol & Teri Pedas


BALADO JENGKOL & TERI PEDAS

Bahan/ingredients:
250 gr jengkol, rendam 3 hari dengan mengganti airnya. Kupas kulitnya. 250 gr dog-fruit, soak for 3 days by replacing the water. Peel the skin.
50 gr teri kering, goreng dan tiriskan. 50 gr dried anchovy, frying and drain.
2 lembar daun salam. 2 pcs indonesia bayleaf.
4 lembar daun jeruk. 4 pcs lime leaves.
2 cm lengkuas, geprak. 2 cm crushed galangal.
100 ml air mineral. 100 ml mineral water.

Bumbu halus/ground seasoning:
6 buah bawang merah. 6 pcs of shallot.
3 siung bawang putih. 3 cloves of garlic.
5 buah cabe rawit merah. 5 pcs red cayenne.
4 buah cabe merah besar. 4 pcs red big chili.
1 sdm gula merah. 1 tbsp brown sugar.
½ sdt garam (sesuai selera) ½ tsp salt (to taste)
1 sdm kecap manis. 1 tbsp sweet soy sauce.
3 buah kemiri. 3 pcs of candlenut.
3 sdm minyak untuk menumis bumbu. 3 tbsp oil for saute seasoning.

Cara/method:
1. Gunakan panci presto untuk mengempukkan jengkol tambahkan 4 cm lengkuas geprek, proses selama 20 menit, tiriskan. Use pressure pan to make dog-fruit tender add 4 cm of crushed galangal, process for 20 minutes, drain.
2. Panaskan minyak tumis bumbu halus bersama daun jeruk dan daun salam hingga harum dan bumbu matang. Heat the saute oil with the spices together with orange leaves and bay leaves until fragrant and the seasoning cooked.
3. Masukkan jengkol, kecap manis dan air, aduk rata. Masak dengan api kecil hingga jengkol empuk. Add dog-fruit, sweet soy sauce and water, stir well. Simmer until dog-fruit tender.
4. Masak hingga air menyusut, masukkan teri dan aduk rata. Cook until reduced the water, add the anchovies and stir well.
5. Siap disajikan sebagai makanan pendamping. Ready to serve as side dish.
