Carrot Cake With Passion Fruit Cream Cheese Frosting


CARROT CAKE WITH PASSION FRUIT CREAM CHEESE FROSTING

Bahan/ingredient:
100 gr gula merah. 100 gr brown sugar
150 gr mentega tawar leleh. 150 gr.melted unsalted butter. (Elle & Vire)
4 butir telur. 4 eggs.
200 gr wortel parut. (Gunakan parutan untuk keju). 200 gr grated carrot. (Use grated cheese)

175 gr tepung rendah protein. 175 gr low protein flour (Kunci biru)
¼ sdt pala bubuk. ¼ tsp nutmeg powder.
½ sdt kayu manis bubuk. ½ sdt cinnamon powder.
¼ sdt jahe bubuk. ¼ tsp ginger powder.
⅛ sdt cengkeh bubuk. ⅛ tsp cloves powder.
½ sdt garam. ½ tsp salt.
½ sdm baking powder. ½ tbsp baking powder.
1 sdt baking soda. 1 tsp of baking soda.
1 sdm cuka apel. 1 tbsp apple vinegar.
50 gr almond iris. 50 gr sliced almond.

Cara/Method:
1. Panaskan oven 175C, oles loyang 20x20cm dengan mentega dan taburi tepung, sisihkan. Preheat oven 175C, spread a 20x20cm pan with butter and sprinkle flour, set aside.
2. Campur terigu, garam, baking powder, kayu manis bubuk, jahe bubuk, cengkeh bubuk dan pala bubuk, sisihkan. Mix flour, salt, baking powder, cinnamon powder, ginger powder, cloves powder and nutmeg powder, set aside.
3. Mixer high speed telur dan brown sugar kira2 5 menit, hingga lembut. Mixer with high speed the eggs and brown sugar until smooth, around 5 minutes.
4. Masukkan no 2 sambil dimixer slow speed, hingga rata, masukkan, mentega leleh, aduk. Add no 2 , remains slow speedmixer until well blended,
5. Campur baking soda dengan cuka apel aduk sebentar, masukkan ke adonan saat msh berbusa sambil diaduk. Mix baking soda with apple vinegar, stir briefly, add it to the mixture when it is still foaming while stirring.
6, Masukkan wortel dan almond, aduk rata. Add carrot and almond, stir.
7, Tuang ke loyang, dan oven hingga 35-40 menit atau hingga permukaan bolu kecoklatan. (Gunakan tusuk sate utk tes bolu tidak lengket berarti sudah matang). Pour into the pan and oven for 35-40 minutes or until the surface is brownish sponge. (Use a skewer for a non-sticky sponge test that means it’s cooked.)

Cream Cheese Frosting:
60 gr mentega tawar. 60 gr unsalted butter. (Elle & Vire)
150 gr cream cheese. (Philadelphia)
100 gr gula icing. 100 gr icing sugar.
25 ml sirup markisa. 25 ml passion fruit syrup. (Tiara)

Cara/Method:
1. Kocok mentega dengan mixer kecepatan rendah hingga lembut, masukkan gula icing bertahap sambil di kocok, masukkan pula cream cheese, dan kocok hingga rata dan masukkan sirup markisa, mixer sebentar dan sisihkan di lemari es. Beat the butter with a low speed mixer until smooth, add the icing sugar gradually while beating, add also the cream cheese, and beat until blended and add passion fruit syrup, mixer briefly and set aside in the refrigerator.
2. Belah di bagian tengah bolu carrot dan oles dengan cream cheese frosting, susun bolu yang lain di atasnya dan tutup bagian atas bolu dengan sisa frosting serta hias sesuai selera. Cut in the middle of the carrot sponge and rub with cream cheese frosting, arrange other cakes on top and cover the top with the remaining frosting and decorate according to taste.
