Bebek Goreng Kepahiang – Kepahiang Fried Duck


Bebek Goreng Kepahiang ini adalah makanan khas dari Kabupaten Kepahiang, Bengkulu (Sumatera Barat) yg merupakan penghasil buah kepahiang (kluwek). This Kepahiang Fried Duck is a typical food from Kepahiang Regency, Bengkulu (West Sumatra) which is a producer of Kepahiang fruit (Pangi Nut).

BEBEK GORENG KEPAHIANG – KEPAHIANG FRIED DUCK

Bahan/ingredients:
1 ekor bebek, potong 4 bagian. 1 pcs duck, cut 4 part.
2 batang serai, keprak. 2 pcs lemongrass, crush
4 lembar daun salam. 4 pcs indonesian bay leaf.
6 lembar daun jeruk. 6 pcs lime leaves.
2 sdt garam. 2 tsp salt.
500 ml air kelapa. 500 ml coconut water.
500 ml air mineral. 500 ml mineral water.

Bumbu halus/ground seasoning:
40 gr daging kluwek. 40 gr the meat of pangi nut.
10 buah bawang merah. 10 pcs of shallot.
5 siung bawang putih. 5 cloves of garlic.
½ sdm ketumbar. ½ sdm coriander.
5 buah kemiri. 5 pcs candle nut.
1 sdt jinten. 1 tsp cumin.
4 cm kunyit bakar. 4 cm roasted turmeric.
100 gr lengkuas, parut. 100 gr galangal, grated..
3 cm jahe. 3 cm ginger.

Sambal:
20 cabe rawit merah. 20 pcs red cayenne pepper.
2 siung bawang putih. 2 cloves of garlic.
1 sdm minyak. 1 tbsp oil.

Pelengkap/condiment:
Nasi. Rice
Timun. cucumber.
Kemangi. Indonesia basil.
Tomat segar. Fresh tomato.

Cara/method:
1. Tumis bumbu halus, sereh, daun salam dan daun jeruk hingga harum. Saute ground seasoning, lemongrass, bayleaf and lime leaves until fragrant
2. Masukkan bebek, air, air kelapa dan masak dengan api kecil sampai bumbu meresap, bebek empuk, dan didihkan hingga sup menyusut. (aku gunakan Slow Cooker dgn proses 3 jam, sdh empuk bebeknya). Add the duck, water, coconut water and simmer until the spices are absorbed, the duck is tender, and boiling until reduce the soup. (I use Slow Cooker with 3 hours process, it’s tender duck)
3. Didihkan sup hingga air menyusut dan bumbu mengental. Sisihkan. Boiling until reduced the soup and seasoning thickener. Set aside.

4. Goreng bebek dengan api sedang hingga kecoklatan. Fry the duck over medium heat until browned.
5. Goreng cabai dan bawang putih ½ matang, tambahkan garam dan ulek kasar. ½ frying cayenne and garlic, add salt and roughly grind
6. Sajikan dengan nasi, sambal, pelengkap dan bumbu bebek. Serve with rice, chili, complement and duck spices.

Note:
Sisa bumbu kepahiang bisa utk masak nasi goreng. Remaining seasoning of kepahiang Duck can be use to cook Fried Rice.
