Kerang Dara Saus Padang – Anadara Granosa Padang Sauce


KERANG DARA SAUS PADANG – ANADARA GRANOSA IN PADANG SAUCE

Bahan/ingredients:
1 kg kerang dara.1 kg anadara granosa.
1 bh bawang bombay, potong.1 pcs onion, cut.
2 cm jahe geprek. 2 cm ginger, crush
3 sdm saus tomat. 3 tbsp tomato sauce. (Delmonte)
3 sdm saus sambal. 3 tbsp chili sauce. (Jawara)
1 sdm saus tiram. 1 tbsp oyster sauce.
2 sdm madu. 2 tbsp honey. (tropicana)
Lada bubuk secukupnya. Some pepper.
1 sdm maizena+2 sdm air untuk pengental. 1 tbsp cornstarch+2 tbsp water for thickener..
250 ml air panas. 250 ml hot water.

Bumbu halus/grind seasoning:
7 buah rawit merah. 7 pcs red cayenne.
1 sdm cabai merah giling.. 1 tbsp grind red chili.
4 siung bawang putih. 4 cloves of garlic.
8 buah bawang merah. 8 pcs of shallot.
2 sdm minyak olive untuk menumis. 2 tbsp olive oil for saute.

Cara/method:
1. Campur saus tomat, saus sambal, saus tiram dan madu dalam mangkuk kecil. Combine tomato sauce, chili sauce, oyster sauce and honey on a small bowl.
2. Panaskan minyak olive, masukkan jahe, tumis hingga harum, masukkan bumbu halus, tumis hingga harum. Masukkan kerang dan air bertahap, masak hingga semua cangkang kerang terbuka, masukkan campuran saus, aduk hingga rata, masukkan larutan pengental aduk hingga kental, angkat dan siap disajikan. Heat olive oil, add ginger, saute until fragrant, add grind seasoning, saute until fragrant, add the clam and water gradually. Cook until all clamshells are open, add mixed sauce, stir well, add the thickening mixture, stir until thick, remove and ready to serve.
