Gulai Kepala Salmon – Salmon Head In Coconut Soup


GULAI KEPALA SALMON – SALMON HEAD IN COCONUT SOUP

Bahan/ingredients:
800 gr kepala salmon, bagi 4. 800 gr salmon head, cut into 4 parts.
2 buah Jeruk Nipis. 2 pcs lime.
Garam secukupnya. Some salt.
1000 ml santan encer dari 1 buah kelapa. 1000 ml light coconut milk from 1 pcs coconut.
250 ml santan kental dari 1 buah kelapa. 250ml heavy coconut milk from 1 pcs coconut.
1 buah wortel, kupas dan potong. 1 pcs carrot, peel and cut.
1 buah kentang, kupas dan potong. 1 pcs potato, pell and cut.
30 batang buncis. 30 stalks of beans.
5 buah tahu goreng, potong jadi 2. 5 pcs fried tofu, cut on 2
10 buah cabai rawit. 10 pcs of red cayenne.

Bumbu utuh/whole spices:
1 lbr daun kunyit. 1 pcs turmeric leaf
3 lbr daun salam. 3 pcs bayleaf.
10 lbr daun jeruk. 10 pcs lime leaves
4 cm lengkuas, keprak. 4 cm galangal, crust.
4 buah asam arsik, keluarkan bijinya. 4 pcs arsik acid, take out the seed.
3 batang serai, keprak. 3 stalks lemongrass, crust

Bumbu halus/ground spices:
1 sdm cabe merah halus. 1 tbsp ground red chili.
10 buah bawang merah. 10 pcs shallot.
8 siung bawang putih. 8 cloves garlic.
4 cm jahe. 4 cm ginger.
4 cm kunyit bakar, kupas. 4 cm grilled turmeric, peel.
1 sdt ketumbar bubuk. 1 tsp powdered coriander.
4 buah kemiri sangrai. 4 pcs roasted candle nut.
½ sdm garam. ½ tbsp salt.
2 sdt gula merah. 2 tsp brown sugar
3 sdm minyak sayur. 3 tbsp veggie oil.

Cara/Methods:
1. Lumuri kepala ikan dgn jeruk nipis dan garam. Diamkan 10 menit. Goreng dan tiriskan kepala salmon. Marinate fish head with lime juice and some salt. Lets stand for 10 minutes. Frying and strain the salmon head.
2. Goreng ½ matang bawang merah, bawang putih dan jahe. Campur dan haluskan bersama kemiri, biji asam arsik, ketumbar, kunyit, gula merah, garam dan cabai halus.half fried shallot garlic and ginger. Mix and ground with candle nut, arsik acid seed, coriander, turmeric, brown sugar salt and ground red chili.
3. Panaskan minyak, tumis bumbu halus hingga harum, masukkan sereh, daun salam, daun jeruk dan daun kunyit. Tumis hingga berubah warna, masukkan ½ bagian santan encer, aduk rata. Heat oil, saute ground spices until fragrant, add lemongrass, bayleaf, lime leaves, and turmeric leaf. Saute until changing color, add half part of light coconut milk, stir well.
4. Masukkan santan encer dan biarkan mendidih, kecilkan api masukkan wortel, cabai rawit dan kentang, masak selama 10 menit. Tambahkan santan kental, aduk perlahan, masukkan kepala salmon, buncis dan tahu. Masak lagi 5 menit. Add the light coconut milk and let it boil, reduce the heat, and carrot, cayenne and potato. Add thick coconut milk, stir gently, add salmon head, beans and tofu. Simmer for 5 minutes.
6. Siap disajikan panas. Ready to serve hot.

Note:
Aku semprot kepala salmon dgn cooking spray dan proses dengan Airfryer selama 20 menit dgn suhu 200C. I spray the salmon head with cooking spray and process it with Airfryer for 20 minutes at 200C.
