Nasi Ayam Sambal Matah – Rice With Chicken Sambal Matah


NASI AYAM SAMBAL MATAH – RICE WITH CHICKEN SAMBAL MATAH

Untuk 4 porsi. For 4 portion

Bahan/ingredients
500 gr daging ayam tanpa tulang, potong sesuai selera dan bumbui ⅛ sdt lada, ½ sdt garam, ketumbar, dan bawang putih bubuk. Diamkan 2 jam. 500 gr boneless chicken, cut as your desire and marinate with ⅛ tsp pepper, ½ tsp salt, coriander and garlic powder: let stan for 2 hours.
Minyak secukupnya untuk menggoreng ayam. Some oil for frying chicken.

4 buah telur ceplok. 4 pcs sunny side up.


Bahan sambal matah/Sambal matah ingredients;
10 buah bawang merah, iris halus. 10 pcs of shallot, finely slice.
7 buah cabai rawit merah, iris halus. 7 pcs of red cayenne, finely slice.
1 btg sereh, iris halus. 1 stalks of lemongrass, finely slice.
4 lembar daun jeruk, iris halus memanjang. 4 pcs lime leaf, finely juliene.
Sejumput garam. A pinch of salt.
1 buah jeruk limau. 1 pcs of lime.
2 sdm minyak kelapa untuk menumis. 2 tbsp coconut oil for saute.

Cara/method:
1. Panaskan minyak, masukkan ayam dan goreng hingga kecoklatan. Angkat dan tiriskan. Heat oil, add chicken and fry until browned. Lift and drain drain.
2. Panaskan minyak kelapa, masukkan daun jeruk, sereh dan garam, aduk hingga harum, masukkan bawang merah, dan cabai, tumis 2 menit, masukkan air jeruk, aduk rata, masukkan ayam, aduk. Heat coconut oil, add orange leaves, lemongrass and salt, stir until fragrant, add onion, and chili, saute 2 minutes, add orange juice, stir well, add chicken, stir.
3. Sajikan bersama nasi hangat dan telur ceplok. Serve with warm rice and sunny side up.
